Instead of plain waffles, try making apple cinnamon waffles or apple cinnamon pancakes. Want some more ideas? At least 4 sunday a month, I go out after church with a group of church members. I always ask for an omelet. Want some thing else?
I never get tired of corn meal mush. It's simple to make. I never get tired of panckes or omelets, either. But I do get tired of goin to the same restatuarnt, and of having the same kind of omelet.

You should make some scones and homeade granola!

Scone recipe:
4 cups plus 1 tablespoon flour
2 tablespoons sugar, plus extra for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
3/4 pound cold unsalted butter, diced
4 eggs, lightly beaten
1 cup cold heavy cream
3/4 cup raisins
1 extra-large egg beaten with 2 tablespoons milk or water, for egg wash
Preheat the oven to 400 degrees F.
Combine 4 cups flour, 2 tablespoons sugar, the baking powder, and salt in an electric mixer fitted with a paddle attachment. Blend in the cold butter at the lowest speed and mix until the butter is in pea-sized pieces. Combine the eggs and heavy cream and quickly add to the flour/butter mixture. Combine until just blended. Combine the raisins and 1 tablespoon flour and then add to the dough and mix quickly. The dough may be a bit sticky.
Dump the dough out onto a floured surface and be sure it is well combined. Flour your hands and a rolling pin and roll the dough out to 3/4-inch to 1-inch thick. You will see lumps of butter in the dough. Cut into squares with a 4-inch cutter and then cut in half diagonally to make triangles. Place on a cookie sheet lined with parchment paper.
Brush the scones with the egg wash and sprinkle with sugar. Bake for 20 to 25 minutes until the outsides are crisp and the insides are done.

Granola Recipe:
4 cups old-fashioned rolled oats
2 cups sweetened shredded coconut
2 cups sliced almonds
3/4 cup vegetable oil
1/2 cup good honey
1 1/2 cups small diced dried apricots
1 cup small diced dried figs
1 cup dried cherries
1 cup dried cranberries
1 cup roasted, unsalted cashews
Preheat the oven to 350 degrees F.
Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.
Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.

Bon apetite!

I try to eat different things for breakfast .
Sometimes I have pancakes. Sometimes bacon, eggs , toast.
Sometimes sausage gravy over a biscuit and hash browns.
Sometimes I just want a biscuit with an egg or a sausage patty in it.
Then if I'm not very hungry, just toast or a buttered biscuit with or without jelly or jam.

French toasts.
Omlet (with vegetables and cheese).
Egg sandwich with two slices of crisp lettuce.
Fried corn mush (with syrup or honey).
Eggs-bacon-sausage and ham slices
Scrambled eggs.
Homefries and eggs (mix the eggs with the homefries and add some chopped up green peppers and red peppers, Yummy!).
Oat meal (Quick Mothers oats).
Cereals.
And, any left overs from yesterdays meal that can be warmed up and mixed up for breakfast can be very tasty too.

These are just a few things you can start out with :)

I wish you well..

Jesse
