Thanks to all suggestions.
Although some people were confused - SHE is a vegetarian (eats no meat or fish) and HE hates vegetables - they are two separate people!!!

I was a vege for 3 years and I suggest making chicken or beef fajitas. Keep the stir-fry veges seperate from the meat. He can have all meat fajitas and she can have vege fajitas, they are great!

My friend had this dilemma recently but she pulled off a great meal but she had 3 vegetarians that night and 4 meat eaters so she made this fabulous vegetarian lasagne using carrots courgettes broccoli cauliflower and the cheese sauce and then for the meat eaters she did a regular lasagne using minced lamb it was all gorgeous, you can divide up and freeze the lefovers seeing as your only having 2 guests. Garlicbutter, sundried tomatoes and parmesan cheese bread for starters and HE can pick off the tomatoes!!

I've never heard of a vegetarian hating vegetables. How about just cooking pasta or nothing but a cake?

If they are good friends of yours, you can just ask them, "What would you like to have for dinner"? Throw the question out there to get some ideas.
If you can't do that, then I would suggest a pasta marinara, baked with a layer of cheese on top. And serve garlic bread. (maybe some wine??)
For dessert, you could make Strawberry Shortcakes, a Fruit Pizza, or any kind of cake or pie.
This sounds good!
Let me know how it turns out :)

I would start with a nice butternut squash soup, and then for main course ( make these in advance so you're not having to rush round on the day) I would make a nut roast with a fresh tomato sauce, and a Chicken Cocovan with roast potatoes and the trimmings.

pesto sauce on it , wrap it in filo pastry then bake
