This is just my opinion, but in the beginning when there weren't very many animals or people on earth, God had created the dinosaurs to keep the flora and fauna in check. Without them the vegetation would have run rampant. Large animals eat large amounts of vegetation, so they were basically made to balance the landscape. As people and smaller animals became more numerous, there was less reason for the dinosaurs so they became extinct. They had served their purpose.

Dinosaurs are reptiles that had a chance to live for several hundred years.

Before the flood, the earth was much different.
The Bible says that there was a ice (water) shield over our atmosphere (this kept out harmful sunlight), it also gave us twice the air pressure and twice the oxygen level of today (air samples taken from amber). This is very healthy (today doctors put people in barametric chambers to help them heal).

Reptiles grow every day of their lives. That is how they became so large.

God did this as another proof that the Bible is true by giving us evidence to confirm the Bible.

God also invented verbs. Baby Jesus weeps.

Is there a purpose to dinosaurs? Would mankind even know?

This is a god who sees fit to command people not to kill while commanding soldiers to slaughter children; take on omniscience while testing Abraham's faith; and creates a paradise while presenting the implement of mankind's destruction himself.

If you're seeking a purpose, I'm afraid you won't find it. Such a god is unknowable and alien in our eyes.
