Yoghurt, yoğurt or yogurt, or less commonly yoghourt or yogourt is a dairy product produced by bacterial fermentation of milk. It can be made from any milk, but modern production is dominated by cow's milk. The fermentation of milk sugar (lactose) produces lactic acid, which acts on milk protein to give yoghurt its gel-like texture and characteristic tang.

In Asia, curd is essentially a vegetarian preparation using yeast to ferment the milk. In the Indian subcontinent, buffalo milk is used for curd due to its higher fat content making a thicker curd. The quality of curd depends on the starter used. The time taken to curdle also varies with the seasons taking less than 6 hours in hot weather and up to 16 hours in cold weather. However in India, the word 'curd' is used to mean yoghurt. In South India, it is common practice to finish any meal with few cups of 'curd rice', made by mixing rice and yoghurt. It is generally accepted to cool the body in tropical climates and is nutritious.

When I was in India, dahi was yogurt. Traditionally curds are what happens when fermentation goes further, or some other means is used like lemon juice, vinegar, or rennet, to separate the milk solids from the whey. Little miss muffet for example. If you put the curds and whey into a cloth bag, the whey will drip out and you will be left with unripened cheese.

YOGHURT - A thick, custard-like, mildly acid preparation. Usually made by fermenting partly skim or skim milk with a special culture. Fruit of other flavorings may be added. In the Middle East it is served as a sauce with meat, fruit and vegetables.

CURD - The term refers to the part of milk which coagulates when acid is added and heat is applied eg Junket. It is used also to describe the milk solids which forms when milk becomes sour.

yoghurt is with added flavour, like strawberry yoghurt, etc. but curd is plain yoghurt
