If you want the fruit at the top when you invert the salad, put it in before it is chilled, and it will sink to the bottom of the mold.
If you want it evenly distributed throughout the Jello, chill it until it has reached the consistency of egg whites and gently fold the fruit in. The Jello will have hardened enough to keep the fruit suspended.

After you put it in the fridge and it starts to thicken then fold in the fruit to have it evenly suspended throughout the mix. Otherwise, add the fruit into the mold first so that it will sink to the bottom. When you invert the mold the fruit will then be on the top,

When adding the cold water to the Jello use ice cubes in with the water. This will help it set up faster. If you use the ice cubes you will notice that it is starting to set up already. You can add your fruit when it starts to thicken.

I put the fruit at the bottom of the mold or dish then I pour the gelatin over it. This way once its harden I can turn the gelatin over and it looks nice and pretty.
