3 eggs
1/2 cup (1 stick) butter
1 pound light brown sugar
2 cups self-rising flour
1 tablespoon vanilla extract
2 (3.4-ounce) packages cook-and-serve chocolate pudding mix
1/4 cup sherry
2 cups heavy cream
1/2 cup sugar
Mint sprigs, for garnish
Preheat oven to 375 degrees F.
Grease and flour a 13 by 9 by 2-inch pan. In a bowl, beat the eggs and butter together; add the brown sugar, then gradually add the flour and mix well. Stir in the vanilla. Spread the batter in the prepared pan and bake for 25 to 30 minutes. Cool and cut into squares.
Prepare the pudding according to the package directions. Let cool slightly. Crumble the blondies into chunks, put them back into the glass dish, and sprinkle with sherry. Spoon the pudding over the blondies. Beat the cream with the sugar just until stiff peaks form. Spoon the whipped cream onto the completely cooled trifle. Refrigerate until serving time.
Add mint to garnish.

Episode: Paula to the Rescue
1/2 cup (1 stick butter)
1 cup packed dark brown sugar
1/3 cup heavy cream, or more if necessary
1 (16-ounce) box confectioners' sugar
1 teaspoon pure vanilla extract
Your favorite cake recipe
1 cup chopped nuts, optional
To prepare frosting, melt butter in saucepan over medium heat and stir in brown sugar and cream. Bring to a boil, then transfer to a mixing bowl. Add confectioners' sugar and vanilla. Beat with a handheld electric mixer until it reaches a spreading consistency. At this time it may be necessary to add a tablespoon of heavy cream, or more, if frosting gets too thick. Just be sure to add cream in small amounts because you can always "add to," but you can't take away. Frost your cake and sprinkle the top with chopped nuts, if desired.
Cook's Note: To fix "runny icing," add additional powdered sugar until the consistency is right.

Episode: Paula to the Rescue
1 small onion, peeled and chopped
14 tablespoons butter, divided (1 stick plus 3/4 stick)
1 1/2 pounds ground beef
Salt and black pepper
8 to 10 medium red new potatoes
2 cups milk
1/2 cup sour cream
2 cups instant biscuit mix
1 1/2 cups niblet corn or mixed vegetables, prepared according to package directions
Preheat oven to 350 degrees F.
Beef Layer:
In a large skillet over medium-high heat, saute onion in 2 tablespoons butter. Add ground beef and cook until browned. Season with salt and pepper, to taste. Set aside.
Potato Layer:
Peel and slice potatoes 1/4-inch thick. Place in a saucepan, cover with cold water, and bring to a boil. Cook for approximately 15 minutes or until fork tender. Drain potatoes and transfer to a mixing bowl. Whip potatoes with an electric mixer, mixing until moderately smooth. Don't over beat them; a few lumps are nice. Add 1/2 cup heated milk, 1 stick butter, and sour cream. Season with salt and pepper, to taste. Whip again until mixed. Adjust thickness by adding more milk, if desired.
Biscuit Layer:
Combine biscuit mix and 1 1/2 cups of milk. The mix should be thinner than that of normal biscuit mix but not runny.
Spray a 9 by 9 by 2-inch pan (or any similar casserole dish) with cooking spray. Layer mashed potatoes halfway up the sides of the dish. Next, spread a layer of corn or mixed vegetables on top of the potatoes. Then add the layer of meat. Pour the biscuit mix over the meat. Melt 4 tablespoons of butter and drizzle over top. Bake for approximately 35 to 45 minutes or until top is golden brown. Let stand for a few minutes before serving.
