Under most circumstances, IHOP would work. The only time the article "the" would be needed would be to specify a certain IHOP in a conversation, probably one all people in the conversation know about. ie, "You wanna go to the IHOP?"

When I wake up and I'm hungry as hell I get own my car, some times alone, some times with my neighbors or friends and then we're looking for somewhere to eat breakfast....
Then suddenly I see "the IHOP" and I scream ** LET"S GO TO IHOP **
*** So my point is say it like you want to and just enjoy it when you are there.

It depends on how you're using it. You could say "I went to IHOP yesterday" or "Is there an IHOP in this city?" or "The IHOP is shut down for remodeling". You don't always say 'the'.
