Coconut cream is the oily matter of coconut and can be made by soaking dried shredded coconut is warm water for a few hours or overnight. The oily material contains the essence of coconut and is used in cooking. Fresh coconut milk is different than prepared coconut milk....fresh milk is almost a milky transparent and has a very mild taste (usually served in the shell, the top being chopped off and sometimes with crushed ice pushed in the hole)...this fresh milk is useless for cooking as it doesn't contain enough of the essential oils. Coconuts that people buy in supermarkets (the ugly round brown hairy balls) are old with solidified flesh (fresh coconuts have a gelatinous texture) and yield a little milk. For curries and satays, etc. Simply take a handful of dried shredded coconut and soak it....skim and use the cream, however many Oriental grocery stories sell canned coconut milk and some carry coconut cream...as well as flaked coconut meat (be sure not to buy the candied variety as your recipes will be overly sweet)

A coconut is a complex fruit with two separate coverings.

There is a fiberous husk. When that is peeled off you have a HARD shell. You have probably seen that.

When you break the shell you get a fair amount of sweet liquid. Folks drink that. It is very refreshing.

The insides of the shell (the nut) is coated in a THICK layer of white substance. Close to 1/2 inch thick.

The cream comes from that white stuff.

Contrary to popular belief it is the white part of the inside of the coconut mixed up with water making a creamy paste. The actual "milk" of the coconut is a clear liquid.

coconut meat grated into fine strips squezzing it....then u got the coconut cream out of it.
