First let me say that I am very happy that your dh is coming safe!
Nos since you still have some time left before he comes home, why don't you cook some nice meals and freeze them. Make lasagna, spaghetti sauce, marinate steaks, chicken, make meat balls..etc... You name it - and freeze them all! This way, all you have to do is thaw it out, grill your meat, or cook some noodles and make a salad for each meal. I hope this helps. I make alot of homemade food and froze enough for 2 weeks, after I gave birth. It's such a time saver. And besides you'll want to have tons of quality time with him.
It's a healthy and economic way to eat and satisfy that loved one who's been gone and eating horrible food.

My son will also be home in a few weeks. He, as most men are big meat eaters, so I plan to make a big pot roast. I use a tip roast, brown it good all around, then add a couple cups water or beef stock. I add a whole onion (just peeled, not cut up) a whole green pepper, a few whole carrots, and a couple of celery stacks. ( I forgot to say I use a very heavy large pot, with a cover. ) Cover and cook very slowly on top of the stove. On an electric stove, I set it to # 2. I cook it for about 3 hours and then remove the onion, pepper, carrots and celery. Add peeled cut up potatoes, and carrots. Cook another hour, on a med flame, or 4 on and electric stove, or until the veg. are done. The left overs can be used for many things, like a casserole, sandwiches, hot beef sandwiches. If you use a large enough roast, it will make 3 or 4 meals.
However, if you have lots of friends and family, let them make you a few meals. I will be sending cooked meals to my son's house and baby setting a lot, so he and his wife have a lot of free time. Remember that if you hubby is anything like my son, he will enjoying being pampered with good home cooking.

If I was gone for a year, I would want to come home to nice comfort food, much like my momma made. Homemade baked beans with brown bread, pot roast, or boiled dinner, roast chicken with mashed potatoes, or something romantic, like pancakes, with whipped cream and strawberries.............. by candle light. God Bless Your Husband who is a GREAT American for is serving his country.

Kraftfoods.com also has great and EASY receipes. Try casseroles.. those are fun to throw together and usually only one dish to dirty.. MAX 2...lol
