Steak Sandwich
1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound
1/2 t. coarsely ground black pepper
Salt to taste
2-3 T. oil
2 T. chopped onion
4 oz. crimini mushrooms, cleaned and chopped
1/2 t. thyme
1 loaf French or Italian bread, or 1 Vienna loaf
3-4 T. prepared mustard
Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.
Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them.

Garlic Chicken
Take two chicken legs and remove excess fat. Place in a small casserole or a recycled aluminium takeaway container ,season with black pepper and a little salt. Add four (4+) cloves of garlic then pour a small amount of olive oil over the contents. Cover and seal with aluminium foil, then put in a hot oven at gas mark 4-5 and cook for half an hour . Remove from oven and loosen the foil lid and turn the legs over and return to the oven until the chicken is cooked ( clear juices when tested). Serve with microwaved rice or small new potatoes.

Rub some salt onto a fillet of fish. Put it into an ovenproof dish, like a gratin dish. Put some knobs of butter on the fillet. Sprinkle almond slivers over it. Bake or grill for about 10 minutes or until cooked and golden brown. Optional: a squeeze of lemon juice. Serve with a salad or boiled veggies. You could also jazz it up with a bit of minced garlic, a sprinkle of mixed herbs, chopped spring onions, sliced leeks, before grilling.
Season a chicken chop with salt, chopped garlic, minced ginger and a dash of pepper. Wrap in aluminium foil and bake or grill for about 12 to 15 minutes till cooked. DON'T microwave anything in aluminium foil. Serve with salad or veggies.
Omelettes are good. You can put all sorts of fillings in them.
Macaroni and cheese.
Pasta with pesto sauce.

TOMATO HUNGARIAN STEW
2 pounds of cheapest cuts of beef cut into small pieces.
1 onion sliced and fried with the meat, in butter or drippings, until
the meat begins to turn brown.
Put a layer of the meat in the kettle; cover with a layer of the
thinly sliced onion; continue this way, alternating the layers of
meat and onion until all the meat has been used; cover with cold
water, and gradually bring to the boiling point. Turn in two cups or
its equivalent of canned or fresh tomatoes, but do not stir; simmer
for two hours, tightly covered; then add some potatoes cut into thick
slices or chunks; salt and pepper to taste; cook until meat is
tender, and serve hot.

A Layered Vegetable Sandwich.
Well, you can use non-veg, but you get good taste with veggies
Layer the follwing on buttered and ONLY buttered bread which is put in a microwave for 12 secs at 750-900 watts.
A few slices of boiled potato/you can also mash it
A few slices of beetroot
Half a sliced tomato
One lettuce leaf
around 6 slices of cucumber
a pinch of black pepper powder
some more butter with a little water on top-about a teaspoon
one teaspoon sugar with 1/4th teaspoon salt melted on a bread slice(WITH THE BREAD SLICE)
stick a toothpick in the middle with coriander for garnishing.
colour slightly with a piece of beetroot.
READY TO EAT
Well, this takes some effort to boil the beetroot and potatoes, but it is worth it... you could do it in bulk and feed your whole family.. Its worth the effort...and good for a change.

Spanish omlette.
Just cook some new potatoes with skins on mix, fry some onions then put in a frying pan and pour the egg mixture over i tranfer it to like a round oven dish when its all stuck together to get it to cook properly. Cut it like a pie and serve with a green salad and a good dressing. Quick and easy and yummy

Cheese and potato pie
Peel a couple of pots, cook them, then mash. Place half in a heatproof dish or plate, grate or slice some cheese all over the mash then spread the rest of the mash over the cheese, you now have a cheese sandwich made from pots. Slice a tomato and place slices on top of the 2nd layer of mash. Grill, until the cheese has turned brownish and bubbles. Eat and ENJOY!!

Stews, chicken,beef, lamb, or vegitarian. Take,s awhile to prepare when everything is chopped chuck it in a nice big pot,let it simmer away untill cooked. You can eat this for about 2/3 days. add some hot chilli pepper to make it interesting, a few oxo cubes for the gravy, just add water,ingredents, simple ,cheap, healthy, and no more cooking for a day or two.

Each week I get a bag of chicken breasts from Walmart, cut it up in chunks and marinate it with a whole bottle of Teriaki Sauce and one packet of stir fry mix. Then I put it in on the stove and slow cook it for about three hours. It normally lasts me at least four or five meals. Its great to heat up with some Goya rice (you can't go wrong with Goya brand rice) or some vegetables.

The freezer is your friend ... chillis, etc, can be made in bulk and frozen in individual portions. Or how about making a nice vegetable casserole, freezing it in portions, and then having that with chops (lamb or pork); chicken joint; gammon steak; beef steak; even a piece of plainly cooked white fish?
