What are your favorite home made soup recipes? ( no seafood ingredients, tho) We prefer vegetarian, beef or chicken...

Actually it does.. I've made homemade soup the last two nights for dinner. I'm just that good.. lol
I will give you a few ideas, but not going to give out the ingredients, if you like them and want the recipes, just email me...

Carrot soup: carrots and celery, really good
Chicken Noodles: Tastes better than progreso soup
Creamy Turkey Soup: Turkey and corn, yummo
Potatoe Soup: Potates and parsnips
Leek and Potato Soup: Leeks and potatoes

To just name a few.. And they are all really really good

Pumpkin Soup kicks butt.
2 kgs of chopped peeled pumpking.
2 big onions. 6 big potatoes, 4 large peeled carrots. 2 litres of chicken stock.
Make sure all ingredients are diced and around the same size. Gently sautee them in a huge pot with a little olive oil until the onion starts to go clear. Then add the stock and bring to the boil. Cook for about 1 1/2 hours until all the veggies are soft and mushy. Let it cool then whiz it up with a food processor.
This freezes really well and is fantastic hot with a dollop of sour cream in it and fresh crusty bread.
If you want a purely veg option then use water instead of chicken stock.

Get stew meat. Season and flour the meat. Heat oil in stew pot. Put in meat, heat until browned. Slowly pour in beef broth so it makes a gravy. After the gravy has formed, pour in rest of broth, about a quart. Add stewed tomatoes, diced onion, and baby carrots cut into small pieces. Let that cook until the carrots just begin to get soft. Now add potatoes and if you like, I do, green lima beans. Cook until the potatoes are done. Start this early, the longer it simmers the better. Any other veggies you can think of, like celery, can be added

Homemade potato soup,

1LB potatoes diced
large can of carrots, chopped or mashed
1 large onion sliced
2 chicken stock cubes

Bung all ingredients in a pot. cover with water, bring to boil. Then simmer until potatoes are to your liking.

You can add any kind of meat if you prefer.

Georgeous served with warm crusty bread.

Chicken Soup with Garlic, Saffron, and Tomatoes:

8 black peppercorns
5 parsley sprigs
2 thyme sprigs
1 garlic clove, crushed
6 cups White Chicken Stock
2 cups chopped leek (about 2 large)
1 1/2 cups chopped fennel bulb
1 1/2 cups sliced mushrooms
1 cup chopped peeled turnip
1/2 cup chopped carrot
1/2 teaspoon saffron threads
1 1/2 cups chopped seeded peeled tomato (about 5 medium)
1 pound skinless, boneless chicken thighs
1 cup thinly sliced spinach
1 teaspoon salt
1 teaspoon black pepper
1 (19-ounce) can cannellini beans, rinsed and drained
1 garlic clove, halved
12 (1/2-inch-thick) slices French bread baguette, toasted

Place first 4 ingredients on a double layer of cheesecloth. Gather edges of cheesecloth together; tie securely. Combine cheesecloth bag, stock, and next 6 ingredients (stock through saffron) in a large Dutch oven; bring to a boil. Reduce heat; simmer 10 minutes. Add tomato and chicken; simmer 20 minutes.

Remove cheesecloth bag and chicken; discard cheesecloth bag. Cool chicken slightly, and chop. Add chicken, spinach, salt, pepper, and beans to broth mixture, and cook 2 minutes.

Rub cut sides of garlic halves over one side of each bread slice, and discard garlic. Place 2 bread slices in each of 6 bowls; ladle 1 2/3 cups soup over each serving.

Yield: 6 servings

here is a recipe for a mexican soup that is cheap to make yet satisfying. i dont have an exact recipe for it. pretty much eyeball it.im from arizona and my husband is from baton rouge where we currantly live. his whole family loves it.

in a large pot put about 2 tbs oil on med to med hi heat
add one box of shells or your choice of pasta
stirring constantly til most of the pasta is browned or toasted.
fill pot with water
bring to a boil
add 2-3 sm cans of tomatoe sauce
2 can mix veggies
3 tbl spoon of beef powder or 6 beef cubes
taste to season (salt, pepper, oregano, garlic salt)
cook til pasta is tender.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.

i made home maed vegteble soup last week from fresh vegies out of my garden, corn, tomatoes, green beans ,potatoes, okra, peas, butter beans, i used ground chuck for the meat, and made corn bread.

Vegetable soup..

Onions, tomatoes, potatoes , chicken broth.

Once you're sick of it, add curry powder, and you have instant curry, voila! I used to have this in my student days.
