it can mean alot of things-literally the sun sets beneath the horizon of the earth (u cant see it anymore)
romantically it may be the total eclipse of the heart
or the opposite
in Jesus it means passing to heaven- :D in amazing grace

Sunset is also used to depict the end of something. Sunset years, the sunset of my heart, sunset of my hopes and dreams...etc.
