Chocolate Cinnamon Rolls:

1 package dry yeast
2 tablespoons sugar
1 1/4 cups warm skim milk (105° to 115°)
1/4 cup stick margarine, melted
1/2 teaspoon vanilla extract
1 egg, lightly beaten
4 cups bread flour, divided
1/3 cup unsweetened cocoa
1/2 teaspoon salt
Vegetable cooking spray
1 egg white, lightly beaten
1/4 cup sugar
1 teaspoon ground cinnamon
1 cup sifted powdered sugar
2 tablespoons skim milk
1 teaspoon vanilla extract

Dissolve yeast and 2 tablespoons sugar in 1 1/4 cups warm milk in a large bowl; let stand 5 minutes. Add margarine, 1/2 teaspoon vanilla, and egg; stir well. Stir in 3 1/2 cups flour, cocoa, and salt to form a soft dough. Turn dough out onto a lightly floured surface, and knead until smooth and elastic (about 10 minutes); add enough of the remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands.

Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in bulk.

Punch dough down. Turn out onto a lightly floured surface; roll into a 16 x 8-inch rectangle. Brush egg white over entire surface. Combine 1/4 cup sugar and cinnamon; sprinkle evenly over dough. Starting at long side, roll up dough tightly, jelly-roll fashion; pinch seam to seal (do not seal ends of roll). Cut roll into 16 (1-inch) slices, using string or dental floss. Arrange slices, cut sides up, in a 13 x 9-inch baking pan coated with cooking spray. Cover and let rise 30 minutes or until doubled in bulk.

Preheat oven to 350°; bake rolls at 350° for 20 minutes. Combine powdered sugar, 2 tablespoons milk, and 1 teaspoon vanilla; stir well. Drizzle over rolls.

Yield: 16 servings (serving size: 1 roll)

What you need:
2 (.25 ounce) packages active dry yeast
2 1/2 cups warm water (110 degrees F/45 degrees C)
1 (9 ounce) package yellow cake mix
1 teaspoon salt
1 teaspoon vanilla extract

1/2 cup butter, softened
3/4 cup white sugar
2 teaspoons ground cinnamon

3 cups confectioners' sugar
1/3 cup butter, softened
1 1/2 teaspoons vanilla extract
1 1/2 tablespoons milk
What you do:
In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
In a large bowl, combine the yeast mixture with the cake mix, salt and vanilla; stir well to combine. Stir in the flour; beat well. Cover bowl and let rise in a warm place for 1 hour.
Deflate dough and turn it out onto a well floured surface. Roll dough out into a rectangle and spread with butter. Sprinkle with cinnamon and sugar. Roll up dough and cut into 3/4 inch thick rolls. Place rolls in two lightly greased 9x13 inch baking pans. Cover and let rise until doubled, about 45 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Bake rolls in preheated oven for 15 to 20 minutes. While rolls are baking, prepare the frosting. In a medium bowl, stir together confectioners' sugar, 1/3 cup butter, vanilla and milk. Let rolls cool slightly then spread with frosting.

6 tablespoons butter, softened

3 cups confectioners' sugar

1-1/2 teaspoons vanilla extract

2 to 3 tablespoons milk

DIRECTIONS



In a mixing bowl, combine 4 cups flour, dry cake mix, yeast and warm water until smooth. Add enough remaining flour to form a soft dough. Turn onto a lightly floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 45 minutes.
Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 14-in. x 10-in. rectangle. Brush with butter; sprinkle with sugar and cinnamon. Roll up jelly-roll style, starting with a long side. Cut each roll into 12 slices; place cut side down in two greased 13-in. x 9-in. x 2-in. baking pans. Cover and let rise until almost doubled, about 20 minutes.
Bake at 400° for 10-15 minutes or until golden brown. Cool for 20 minutes. For frosting, in a mixing bowl, cream butter, confectioners' sugar and vanilla. Add enough milk to achieve desired consistency. Frost warm rolls. Yield: 2 dozen.

Do you have a bread maker? I use mine to make a bread dough recipe. Then I roll the dough flat and spread it with honey. Then I sprinkle with cinnamon and walnuts or pecans. Then I roll it into a log and then cut it into about a dozen pieces. Then I bake it. It is so simple, yet yummy and not too fattening.
