How much noodles are there in the bowl?
Top one is correct and as you say how much hair? not How many hair? Must mean that noodles are countable??
Just a theory !

I would say that noodle is usually used as a countable noun.
(It can be used as both, of course, just like all nouns. Sorry!)

Since it has a plural, it has got to be countable, hasn't it? Never mind it isn't usually employed in the singular.
Words like "scissors" and "trousers" are also only used in the plural. But they ARE plural, so they are count nouns.

uncountable... we usually ask for a bowl, a plate, a box or container of some sort when we speak of them. You could say, "Pick up those three noodles that fell on the table or I will kick your a$$." But that isn't how we normally speak of them
