There's a lot of recipes out there for pumpkin cheesecake. Hits the pumpkin spot , but not a pie. Apple dumplings or crisp are an alternative to that typical dish. But a nice rice or bread pudding would also fit in with that type of meal.

Pumpkin Dip-

1 can of pumpkin filling (not pumpkin pie filling)
1/4 cup brown sugar
8 oz. of cream cheese (room temp)
cinnamon & nutmeg to taste

Mix well and serve with graham crackers. Make an excellent appetizer also.

Try a good Pecan Pie or a Fresh Apple Cake. A Mincemeat pie with Rum and Bourbon with a dollop of whipped heavy cream and sprinkle of cinnamon on top works also!

Easy Red Velvet Cake

This easy red velvet cake recipe starts with a cake mix. A red velvet cake recipe with cream cheese icing, from Joan.
INGREDIENTS:

* 1 cake mix, butter, yellow, or white
* 1 oz red food coloring
* 3 tablespoons cocoa
* .
* Cream Cheese Icing
* 1 package (8 ounces) cream cheese, softened
* 1/2 stick butter (4 tablespoons)
* 1 pound powdered sugar
* 1/2 cup nuts,chopped
* 1 teaspoon vanilla

PREPARATION:
Prepare cake mix as directed. add food coloring and cocoa; bake [follow cake mix directions for temp, time, etc.]. Cool before icing. Beat cream cheese & butter until smooth. Add sugar;mix well add vanilla.

Spread over cake & sprinkle w chopped nuts.



Special Sweet Potato Casserole
.

* 4 cups Hot mashed sweet potatoes
* Butter or margerine
* 2 tablespoons Granulated sugar
* 2 each Eggs -- beaten
* 1/2 cup Milk
* 1/3 cup Pecans -- chopped
* 1/3 cup Packed brown sugar
* 2 tablespoons Flour


Mix the sweet potatoes, 1/3 C butter and the granulated sugar. Beat in the eggs and milk. Pour into a greased 2 qt casserole. Combine the pecans, brown sugar and flour. Stir in 2 tablespoons of melted butter.
Sprinkle the mixture over the sweet potatoes and bake at 325 for 1 hour.

Lite after a heavy meal...and always at my Thanksgiving table...

1 can of crushed pineapple, drained well
1 can of fruit cocktail, drained well
1 banana, mashed well
1 small container of whipping cream

Mix the fruit, whip the cream (I hope you know it takes sugar & vanilla), fold together and put in parfit glasses. Chill and serve, tastes best if the dessert is made that morning.

Here is nice recipe for a:

"Pumpkin Roll"

2/3 c. cooked or canned pumpkin
3 eggs
1 c. sugar
3/4 c. flour (all-purpose)
1/2 tsp. salt
1 tsp. baking powder
2 tsp. ginger
1/2 tsp. nutmeg
1 c. chopped nuts
Powdered sugar
1 tsp. lemon juice

Pumpkin roll filling:

1 c. powdered sugar
1/4 c. butter
6 oz. cream cheese, softened
1/2 tsp. vanilla

Beat eggs 5 minutes and gradually beat in sugar.
Stir in pumpkin and lemon juice.
Combine flour, baking powder, salt and spices; fold into pumpkin mixture. Pour batter into a floured, greased cookie sheet and sprinkle with nuts.
Bake 15 minutes at 350 degrees or until cake springs back when touched.

Sprinkle powdered sugar on a towel. Loosen edges of cake and immediately invert onto towel. Roll cake up in towel beginning with narrow edges. Cool cake completely. Unroll cake and spread with filling to within 1/2 inch of edges. Re-roll cake and chill. Keep in refrigerator.


Pumpkin roll filling:

1 c. powdered sugar
1/4 c. butter
6 oz. cream cheese, softened
1/2 tsp. vanilla

Combine ingredients and beat until smooth.


You can serve this with cool whip topping or vanilla ice cream.

This may sound bad but it tastes great !. Try some fruit cake (date cake) and some warm topping of choice. If there are kiddies swap the topping for creamed rice.
