Off peak season. Typically September through November, and then February through the end of March.
Flights are cheaper during this time, and although the weather is typically on the cool side, tourist attractions will be less crowded, and you can get a better feel for the 'real' Europe. (as opposed to tourist-laden Europe)

I like end of September, October. Weather is still good. Price of flights have gone down since the summer.

it depends entirely on what you are looking to do or see. if its skiing then you should go in winter, if its sightseeing then spring or fall are the best, however if its night life and swimming then I would suggest you come in the middle of summer.
