How do you turn on nightvision for a Canon Powershot A75?

This camera doesn't have a nightvision mode. You may be thinking about infra-red (IR) photography. In that case, you'll need a lens adapter such as this in order to attach an IR filter - http://www.lensmateonline.com/newsite/A85A75A70A60.html

I have a new A540 and I believe you have to turn your dial to SCN
and make sure that you are in pic taking mode and use the circular dial pushing it to the right to change the settings.
I hope mine is simular to yours .. if not sorry.
