We just got a crockpot and I would like some dinner ideas. It is a 3.5 quart one. I need something quick that I can toss together before work and let cook all day (while my fiance is at home). We don't have a lot of money so cheap is good. Also I would PREFER it to be healthy.

We love meat! :-) A helpful tip! :-)

Meat Loaf Italian Style (this meat loaf can be formed the night before, refrigerated and then cooked in the Crock-Pot the next day.

1 can (8 oz.) pizza sauce
1 beaten egg
1/2 cup chopped onion
1/2 cup chopped green sweet pepper
1/3 dry seasoned bread crumbs
1/2 tsp. garlic salt
1/4 tsp. black pepper
1 1/2 lbs. ground beef
1 cup shredded mozzarella cheese

Reserve 1/3 cup pizza sauce; cover and refrigerate. In a mixing bowl combine remaining pizza sauce and egg. Stir in onion, green pepper, bread crumbs, garlic salt and black pepper. Add ground beef and mix well.

Make foil aluminum foil handles by tearing off three 20 x 3-inch strips of heavy foil or regular foil folded to double thickness (tear these 20 x 6). Crisscross the foil strips in a spoke design on a piece of wax paper. Shape the meat loaf on the spoke design slightly smaller than your Crock-Pot. Lift the ends of the handles to transfer the loaf to the Crock-Pot.

Cover and cook 8 to 10 hours on low or 4 to 6 hours on high. To ensure doneness insert a meat thermometer into the center of the loaf and internal temperature should read 170 degrees F.

Spread loaf with reserved pizza sauce. Sprinkle with mozzarella cheese. Cover and cook 15 minutes more or until cheese is melted. Using foil strips, lift loaf from Crock-Pot and transfer to a serving plate. Discard foil strips.

If you like things like chili then enjoy this recipe:

Taco soup

1 can northern beans
1 can kidney beans
1 can ranch style beans
1 can tomatoes
2lbs hamburger meat (if you like a lot of meat)
1pkg taco seasoning
2pkgs dry hidden valley ranch dressing or 1 double pkg
1 can corn (optional)

*cook the meat and drain the grease from it

*then put meat back in skillet and cook w/ taco seasoning(follow the directions on the back)and dry ranch dressing

*add all the beans, tomatoes, and meat in the crockpot on the lowest setting

*10 minutes before serving add corn if you want it is optional

Then you can serve with cornbread, tortilla chips (or fritos),or other garnishes that you think are good jalapenos, sour cream, cheese, etc.

When we eat this we put a spoon of sour cream on top, with cheese

Chicken in Mushroom Sauce:

4 boneless skinless chicken breast halves
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup (8 ounces) sour cream
4 bacon strips, cooked and crumbled

Place chicken in a slow cooker. Combine soup and sour cream; pour over chicken. Cover and cook on low for 4-5 hours or until chicken is tender. Sprinkle with bacon.

My fave to make in a crockpot is creamy chicken and biscuits.
Put Chicken breast in the crockpot and cook on low all day with garlic, onion and seasoning.
When you get hom they will already be falling apart so shred with forks and dump in a can of Creamy Mushroom or Cream of chicken soup. You can add mushrooms, peppers, pees, etc. whatever you like.
Pop some pillsbury biscuits in the oven and top with the chicken. Yummy.

Here's the recipe for chicken. Get some chicken thighs, wash them and put them in the crock pot. Layer some carrots and diced potatoes on top of the chicken. Then, add a can of cream of mushroom and DO NOT add water. Slow cook it for 3-6 hrs depending on whether it's hi or lo. When it's done, serve it with rice.

Oh! I love my crockpot...

The best recipe book out there (imho) is "Fix-It and Forget-It Cookbook: Feasting With Your Slow Cooker" by Dawn J. Ranck and Phyllis Pellman Good.

It is cheap (around $14.00) and you can find it almost every where... it is a New York Times Bestseller.

The recipes in this book are so easy... and very tasty. They are also very quick to prepare and all the ingredients are things you can find in a normal grocery store.

I highly recommend this book... it is a crockpot must have...

I usually cook a roast with potatoes and carrots, onions and seasonings in the crock pot.

I also put boneless chicken breast in with seasonings and veggies. And then add noodles about 15 to 20 minutes before we are going to eat, makes a great soup.

Homemade Spaghetti sauce. It's easy and economical. Freeze leftover sauce,

1 med. onion chopped
1teaspoon or more of fresh minced garlic ( I use fresh from jar)
1/3 cup or more fresh chopped bell pepper
mushrooms sliced
olive oil
1small can tomato paste
2- 8 ounce cans tomato sauce or equivolent
1 pound ground meat or sausage cooked and drained
1 teaspoon dried oregano
1 teaspoon dried sweet basil
salt and pepper to taste

Saute oil, onion, garlic and bell peppers for just a few minutes if desired. Otherwise dump all ingredients in crock pot and place on low.

This is also very good with leftover roast pork instead of ground meat. Cut small chunks of pork and place in sauce to cook. Yum!

Pot roast:

Chuck roast trimmed of big chunks of fat- generously salt and pepper entire roast and sprinkle with fresh minced garlic. Place in crock pot
Add fresh chopped onion, bell pepper, celery, sliced mushrooms, carrots and potatoes. Salt and pepper veggies.
Cook on low. Gravy-I use powder gravy mix. Instead of water use drippings in pot. Good stuff.

DIRECTIONS



Place potatoes and carrots in a slow cooker. Top with chicken. Combine the soups and garlic salt; pour over chicken. Cover an cook on low for 8 hours. To thicken if desired, stir potato flakes into the gravy and cook 30 minutes longer. Yield: 4 servings

1 boneless beef sirloin tip roast (2-1/2 pounds)

1 tablespoon canola oil

1 cup each ketchup and water

1/3 cup packed brown sugar

3 tablespoons Worcestershire sauce

2 tablespoons lemon juice

2 tablespoons cider vinegar

2 tablespoons Dijon mustard

2 teaspoons celery seed

2 teaspoons chili powder

12 kaiser rolls, split

DIRECTIONS



Sprinkle roast with salt and pepper. In a nonstick skillet, brown roast in oil on all sides over medium-high heat; drain. Transfer roast to a 5-qt. slow cooker. Combine the ketchup, water, onion, brown sugar, Worcestershire sauce, lemon juice, vinegar, mustard, celery seed and chili powder; pour over roast. Cover and cook on low for 8-10 hours or until meat is tender. Remove meat; shred with two forks and return to slow cooker. Spoon 1/2 cup meat mixture onto each roll. Yield: 12 servings.
