BAM! I use Emeril's Essence. Here's the recipe:
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly. RUB on steak and grill or broil.
I like to also use Soy Sauce as a marinade or for dipping on my steak.

I marinade in Italian dressing (spear the steaks and pour about a half cup over them a glass dish cover and put in the frig for two hours before grilling) NEVER salt a steak...pepper is good and a little garlic is nice too. Sauteed Mushrooms with worchester sauce over the top of them if you like Mushrooms.

I marinate my steaks in a mixture of Worchestershire sauce cut with a little water, onion salt and garlic powder. And before I cook them, I sprinkle them with Montreal Steak Seasoning. I love that combination of flavors.

Montreal steak seasoning is a mixture of salt, pepper, and red pepper, although the proportions are difficult to mimic compared to McCormicks.
Very tasty!
