Female mammals produce milk. Their young instinctively suckle at their breasts to get the milk. Humans obviously know that milk comes out of breasts as they get it from their own mothers. So they went and tried it from a cow. It tasted better than from most animals so they stuck with it. It wasn't exactly much of a leap...

Mmmm, I think of how the first cheese was discovered by the person cutting up a calf with curdled milk in it's stomach. Who thought to eat that? Is this why Parmesan and other cheeses stink like vomit? I've got no ideas on what inspired the teat fancy, though.

he might have seen a calf suckling then checked out the teats and discovered milk.
For the one wondering about meat people used to eat it raw until one day there was a fire and it burnt all their animals and someone eat the burnt carcasses and discovered that it tasted better than raw meat.

My guess is that some dude got a craving for milk and thought it improper to ask a woman for a suckle. Things were slow on the farm that day, and one thing led to another.

His wife told him "No milk today from me, go suck a cow". That is how it all started. The rest is history.
