Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6

1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray

Instructions:
Preheat the oven to 350ºF

Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.

Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.

Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.

Serve immediately.

Crock Pot Enchiladas
Serves 6

1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup

Instructions:
Brown hamburger and chopped onion and pour off grease.

Put all the ingredients into the crock pot. Mix and cook low 4-6 hours or on high for 2-3 hours.

Gravy Baked Pork Chops
Serves 4

4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup

Instructions:
Preheat the oven to 350º F.

Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.

In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops.

Bake for 45 minutes. Serve immediately.

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
3 Tbsp Brown Gravy Mix
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the brown gravy mix, diced green chili peppers, and the diced tomatoes; mix until well combined. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Invert loaf pan onto a broiler pan to allow any fat to drain off while cooking. Bake for 45 minutes.

Remove loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Strawberry Shake
Serves 2

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Whole Strawberries, garnish
2 Tbsp Sugar Substitute (recommended: Splenda)

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.

Pour into glasses; garnish each with a whole strawberry.

Try to make Garlic Fried Chicken
Servings:6
Ingridients:
1 tablespoon garlic powder, or to taste
1-1/2 teaspoons ground black pepper
1-1/2 teaspoons salt
1-1/2 teaspoons paprika
3/4 cup seasoned bread crumbs
1-1/2 cups all-purpose flour
3/4 cup milk
1-1/2 egg
6 skinless, boneless chicken breast halves - pounded thin
1-1/2 cups oil for frying, or as needed

DIRECTIONS:
In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour. In a separate dish, whisk together the milk and egg.
Heat the oil in an electric skillet set to 350 degrees F (175 degrees C). Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated.
Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear. Remove from the oil with a slotted spatula, and serve.

Take a whole chicken, salt & pepper the cavity. Add a handfull of celery and onion. Bake at 325 for 15 min per pound. It is done when to leg bone moves around easlily Use boil & bag rice. It will cook while your chicken rests (10 min) have your water ready when the chicken is done. Add bread from the bakery and a salad and impress anyone.

my first thought is if it's the homecoming dance why in the world are you going to cook when you have to get yourself ready ? but o.k. i would definitely go with the oven because of not making a big mess so the easiest way is to bar b q it . just take the chicken put it in a pan (lay each piece flat) then cook on about 375 degrees according to your stove , add your sauce before it gets done & don't forget to keep it covered with foil the whole time , also you could throw some potatoes in there with it & that would be simple & very tasty . they could be peeled or unpeeled but need to be quarted. good luck & god bless you

just learned how to make Chicken Cordon Blue...
heat your oven to... 375
take a chicken breast (boneless) and place it bewteen some saran wrap and use a pot and smack the hell out of it.. until it is about 1/4 inch flat.
remove saran wrap

salt and pepper it. then place a piece of swiss cheese and sliced ham in it (any kind of ham you want.. i bought the cheap stuff that cost like 50 cents a pack

then roll the cheicken up. use a tooth pick to secure it in place.
then roll the chicken in some flour.
then beat an egg and roll it in the egg
then roll it in some bread crumbs

pop them in the oven for about... 30- 45 mintues...
now you need the sauce..
melt about 2 TBS of butter into a small pot..
when its all melted turn the heat up to like med.
at about 2 tbs of flour.... and whisk it until its brown... and smells a bit nutty..
then add some heavy cream... about 1/4 of a cup and let it come to a soft boil... you can add salt and pepper to taste
now take some more swiss cheese about 3 slices... and break them up and drop them into the pot and keep stiring until they all melt...
when when the chicken is done.. pour over chicken or serve on the side as a dipping sauce.

Blackened chicken pasta, I had this the other day and OMG was it ever great.

Blackened Chicken Penne Pasta

5 oz chicken breast, marinated
1 Tbs Cajun chicken seasoning
10 oz penne pasta
6 oz Alfredo Sauce,
2 oz fresh spinach leaves
2 oz tomatoes, diced
1 Tbs Parmesan parsley
5 slices garlic toast - (to 6)


Season both sides of marinated chicken breast with Cajun chicken seasoning. Grill chicken to a temperature of 165 degrees. Slice chicken to 5 or 6 pieces.

cook penne pasta and add Alfredo sauce in 2-quart pot Swirl pasta and sauce to coat mixture evenly.

Remove lid and add fresh spinach leaves and diced tomatoes. Replace lid and swirl mixture to achieve even consistency. Remove top and place into large bowl. Top pasta with chicken. Sprinkle Parmesan parsley over chicken and pasta. Cut toast on the bias and place on rims of bowl.

This recipe yields 5 or 6 servings.

get fetticine noodles alfredo sauce and broccoli (or not on the brocc) and boneless skinless chicken breast , you can buy it already sliced into little pieces or you can do that yourself. boil the noodles as directed on package, brown the cut up chicken in a skillet with non stick cooking spray, after the noodles are soft, drain them and put them and the sauce back in the pan on low heat top it with the cooked chicken and mozzarella and parmesean if you like. you can serve a tossed salad and bread sticks (really easy to make frozen ones that cook in like 10 minutes in oven) and serve it with like sparkiling grape juice or sparkiling cider to imitate the champagne. make sure to use pink scented candles and a tablecloth and set the table with nice plares and silverware, use white linen napkins if you have some............and oh yeah....have fun and if you use broccoli you have to boil it or steam it so it is not too crunchy

Heat up the oven... get some chicken breasts and top them with a mixture of :
1/2 c. mayo
1/2 c. parm. cheese
2 T/ lemon juice
mix well and spread some on each breast and bake for 30 min. Then top each breast with a couple strips of bacon and continue to bake for 15 minutes more or till the bacon is crisped up or to your liking.

Serve with roasted garlic mashed potatoes !

this is so simple .take your chicken breast put in a cake pan and cover with Italian dressing bake until done. Spice it up cover it with salsa. Bake potato w/ sour cream and a veg. to your liking. an other one I just thought of. put the chicken on cookie sheet spray chicken with a cooking spray take french fried onions crush up add Parmesan cheese, cookies seasoning mix in bowl then cover chicken with the mix spray again. bake at 350* until done depends on size of the chicken.
