Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all the ingredients into the crock pot. Mix and cook low 4-6 hours or on high for 2-3 hours.

Gravy Baked Pork Chops
Serves 4
4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup
Instructions:
Preheat the oven to 350º F.
Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.
In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops.
Bake for 45 minutes. Serve immediately.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
3 Tbsp Brown Gravy Mix
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the brown gravy mix, diced green chili peppers, and the diced tomatoes; mix until well combined. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Invert loaf pan onto a broiler pan to allow any fat to drain off while cooking. Bake for 45 minutes.
Remove loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Strawberry Shake
Serves 2
1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Whole Strawberries, garnish
2 Tbsp Sugar Substitute (recommended: Splenda)
Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry.

This is easy. I don't know if you'll like it but it only takes 5 minutes to prepare and 20 minutes to do the whole thing. It's called the Microwave Ravioli Casserole. Here's the recipe
Microwave Ravioli Casserole
1pound lean ground beef
1small onion, chopped (1/4 cup)
2cans (15 ounces each) beef ravioli
1cup shredded mozzarella or Cheddar cheese (4 ounces)
1.Crumble beef into 2-quart microwavable casserole. Add onion. Cover loosely and microwave on High 5 to 6 minutes, stirring after 3 minutes, until beef is no longer pink; drain.
2.Stir in ravioli. Cover tightly and microwave 5 to 7 minutes, stirring after 3 minutes, until hot. Sprinkle with cheese. Cover and let stand until cheese is melted.

Some time it is nice if your husband can cook for you. You will enjoy it even if it doesn't taste good.
Steam the vegetables for 15 minutes and put it in a casserole bowl and prepare the way you normally make casserole with meat.
Stir fry rice with burger.
noodles with roast chicken.
Have once a day banana. It is goo for the nborn baby.

For starters you should seriously consider cooking several meals on a day that u r free and freezing them until dinner time during the week.For instance, on my one and only day off.I spend my entire morning cooking meals that I will eat during the week.Meals such as eggplant parmesan,or meatballs,chili,and don't forget shepherds pie.All of which can be frozen and taken out the morning of the day you plan to dine on such a feast.That is one solution.On the other hand,if u r looking for quick recipe ideas.You need to look no further than the back of any "Campbells" soup can.Especially when it comes to casseroles.As a bonus I will share with you one of my favorite and most quickest recipes.Ramen Soup?If u r familiar with those bricks of oriental 1 minute soups then u r halfway there.Take four packages of "BEEF" flavored ramen noodle soup.Boil all four bricks according to the directions.Do not add the flavor packets.While the noodles are boiling,finely chop a few toes of garlic and lightly brown them in a wok or large pan of about 1/4 cup of oil.(preferably olive oil)The garlic should brown over medium heat at exactly the same time your noodles are done.Be sure to set the garlic and oil aside to a colder spot.If u leave the wok or pan on the same burner you cooked it on,chances are the garlic will burn thus leaving a bitter taste in your mouth.Next drain the noodles in a collander and shower the noodles under cold water at the same time in the sink.Allow the cold water to run over at least 1 min.With your hand press down lightly on the noodles(still in the strainer) and press out as much water as u can without mashing it.Next take only 2******only 2******* packets of the ramen seasoning and combine them with the noodles Stirring lightly with a fork to evenly distribute the flavor.Now, if you have frozen peas and carrots add them to the noodles .Next and final stage,bring your wok or large pan back to the stove over low heat and dump the noodle concoction in.Stir rapidly until the peas and carrots soften or defrost.YOU'RE done.When u get good at this simple recipe it should only take u about 10 minutes to complete.HINT:If u have any left over pork or beef u can add that as well.Just simply cut into small pieces.WARNING:this dish will make your house smell like Italy and quite possibly give your husband gas.ENJOY

Do NOT buy prepackaged meals. That is just not necessary and very unhealthy. You're pregnant! Avoid the preservatives. There are many easy meals you can make that do not take long at all. One idea is to go to the food network and look up Rachel Ray's 30 minute meals. Or get some of her books from the library. She has some great recipes.
Here are a few from my own kitchen that are so simple and easy:
Black beans and rice:
Make rice,heat up a can of black beans. Serve beans over rice with shredded cheese, salsa, sour cream or whatever you want. Serve with warm tortillas or tortilla chips.
Greek turkey burgers:
take pound of ground turkey, mix with 1/3 cup fine dry bread crumbs, 1 slightly beaten egg white, 1 tbsp milk, half envelope of italian salad dressing mix--shape into oval patties, put on broiler pan and broil for 11-13 minutes turning once.
Serve in whole wheat pitas with the following greek salsa
2 tbsp white wine vinegar or balsamic (I prefer the balsamic)
2 tsp olive oil
rest of italian seasoning packet
1/4 cup finely chopped cumcumber and 1 cup finely chopped tomato
You can also use 1/4 cup finely chopped kalamata olives but we leave these out because hubby doesn't like them
The recipe says to sprinkle with feta cheese. However, you are pregnant and should be avoiding soft cheeses. I'm pregnant too (19 weeks) so what I do with this recipe is put the feta in the burger mixture so the cheese cooks right into the burgers.
Tuna Casserole
Cook noodles, mix with two cans of tuna and one can cream of mushroom soup. Do not use campbells. Try to find a brand that uses no preservatives. Amy's brand is excellent. Mix tuna and cream of mushroom mix with cooked noodles. Spread in pan, cover with American cheese silces. We use Kraft's deluxe. Top with crushed crackers or chips (using natural brands without trans fat) cook in 350 oven until your cheese is melted. Sprinkle with chopped or sliced black olives (optional). YUM! My family loves this one. I know as pregnant women we're supposed to limit tuna so just don't eat this one too often. This is my third pregnancy and I've never had an issue.
Some good web sites to browse are allrecipes.com and vegweb.com They have great recipes and have reviews which I find very helpful. vegweb is geared toward vegetarians but they have some great recipes and you can alter them as you need to.

just learned how to make Chicken Cordon Blue...
heat your oven to... 375
take a chicken breast (boneless) and place it bewteen some saran wrap and use a pot and smack the hell out of it.. until it is about 1/4 inch flat.
remove saran wrap
salt and pepper it. then place a piece of swiss cheese and sliced ham in it (any kind of ham you want.. i bought the cheap stuff that cost like 50 cents a pack
then roll the cheicken up. use a tooth pick to secure it in place.
then roll the chicken in some flour.
then beat an egg and roll it in the egg
then roll it in some bread crumbs
pop them in the oven for about... 30- 45 mintues...
now you need the sauce..
melt about 2 TBS of butter into a small pot..
when its all melted turn the heat up to like med.
at about 2 tbs of flour.... and whisk it until its brown... and smells a bit nutty..
then add some heavy cream... about 1/4 of a cup and let it come to a soft boil... you can add salt and pepper to taste
now take some more swiss cheese about 3 slices... and break them up and drop them into the pot and keep stiring until they all melt...
when when the chicken is done.. pour over chicken or serve on the side as a dipping sauce.
add your favorite veggie.. (brocili is really good with the sauce)

Baked Ziti
12 oz. Ziti or Penne Pasta
1 lb. ground sweet sausage (or other sausage, hamburger works too)
1 can (14.5 oz) diced tomatoes with garlic, drained
1 can (14.5 or 15 oz) Thick Tomato sauce
2 cups grated mozzarella cheese (or provalone)
Cook pasta according to package directions. Preheat oven to 350* F. Spray a 9x13 baking pan with cooking spray. Brown meat in a large skillet over medium-high heat; drain and set aside. Drain pasta; Combine pasta, tomatoes and tomato sauce. Add well drained meat and 1 cup cheese. Pour into prepared baking pan. Top with remaining chesse. Bake for 20 minutes or until cheese is bubbly and melted.

Have a good old BBQ, Get the men to do the cooking and you make the salads. Then put your feet up and relax with a glass of wine.
Some of the salads you can buy ready made as well as some tasty chicken kebabs to serve and don't forget to throw a shrimp on the BBQ.

This is my 15 minute chicken parmesan that turns out great everytime. I use it when I'm too tired to think of anything else.
Take a frozen pre-cooked chicken patty (either the breast or strips), dump a jar of premade spagetti sauce on it and put it in the oven for 13-14 minutes (following package directions). Place noodles on stovetop to boil. After 13-14 minutes, add parmesian cheese to chicken and sauce and put back in oven to melt. Drain pasta. Take chicken/sauce out and put on top of pasta. Viola!

Dice up a few carrots and some celery. Toss in some garlic (AT THE END FOR ONLY MOMENT) add diced chicken. Simmer in fat free chicken broth. Add egg noodles at the end. Homemade chicken noodle soup. What could be better?! Plus very little clean up. Good luck and get some sleep!
