The 3 phase system is used because it can easily supply the power necessary for large motors used for industrial purposes and it is also easy to separate into single phases for home use.

depends what you're using it for. Single phase is used in homes and small commercial. 3phase is used in industrial applications for machinery, because it provides smoother startups; that's 120/240 delta. There is also a 120/208 "wye" 3 phase that is used in multi-unit residential buildings. All three legs are 120 V to ground and 208 between any two hot legs. In the "delta" configuration, two of the hot legs are 120 V to ground, the third, called a wild leg, is 208 to ground. The two 120-to-ground wires are 240. The wild leg is added to industrial circuits. There are also higher voltages that are exclusively for large buildings and industrial applications. Single phase AC power is useful for small loads. In larger loads we needed to be able to provide economical ways to supply heavier demands.
An electrical cycle is 360 degrees, In order to provide a symmetrical or balanced load, the phases are produced in three separate power conductors 120 degrees out of phase. and therefore balanced. Wire size and equipment size is therefore smaller while maintaining efficiency.

the three phase system is used because it describes the boundaries between which most materials under normal conditions experience large changes in materials properties. supercritical water for example is not really a liquid or a vapor since is doesnt have a well defined transition between the two. add charged plasmas and Bose-Einstein condensate to the mix and i guess you end up with 6 phases of matter. YAY!!!
