Hmm, your description sounds passingly like my wife of several years. Stunning woman, and I wouldn't want another for all the salt in the oceans.
To your question,
Young males (like young females) are constantly bombarded with Victoria's Secret models, Shakira videos, and a tide of other hyper-slim women (who have professional trainers to maintain the look) and we are told that this is "beauty", and to reject anything else.
However, as we mature, we begin to realize that while they are nice to look at, these scrawny, boney ***, greyhound-hybridized mutations are impossibly unrealistic for the real world, and usually spoiled rotten drama queens.
I (mis) spent my youth looking at the media examples and grading the girls around me against that standard.
Then I grew up, and realized that if you're hungry, you should keep the meat for the man, and throw the bones to the dogs.
Be proud of yourself, take care of yourself, love yourself for who YOU are, not against who they want you to be.

As the father of a teenage boy I wonder how he decides on his girlfriends. He is with his third girlfriend; the first was Reubenesque and the second was a goth. Now he is dating a Japanese girl, fairly plain, but a genuine person. I remember back to my teen years and know I was attracted by "very good-looking girls" but the reality was that I dated girls I could talk to and just hang out...that liked to do the same activities as I did. If a guy is only attracted to you physically then it will be a shallow relationship and ultimately you both will be hurt. If you have interests in common you will probably be more comfortable and get along better.
So in short, acting your best is better than looking your best.

Sounds like you're attractive to guys who have grown up a bit and are more willing to view the whole person rather than just the body. You sound a lot like how my gf looks, she has red hair though, and I find her very attractive. I just look at my gf and I know that I love her.
So you are probably attracting the older guys because their values have changed as opposed to the high school guys that haven't.

The truth is guys do find you attractive, which I'm pretty sure you are, it's just that in highschool, the boys are very immature. They need each other's opinion about every girl they date. If at any reason, they think their friends wouldn't approve of the girl, they don't even approach her. Unfortunately it's not until after highschool that those boys realize that they don't need anyone's approval of who they date. It's a sad and wrong.

High School is a big clik. Everyone knows everyone else business and in High School people judge pretty harshly. but in the real world, outside of school, it is based on how you act and how you look. Nobody cares what is said in study hall outside of school. No peer pressure. HighSchoolers are too critical. I hope you get what I'm saying for it's been a while since I was in high school.

guys out at a bar are probably beer goggling and looking to get laid. They wouldn't consider you for a relationship because face it. A chubby girl is just not relationship material.
Go on a diet and loose some weight and tone your body. Have some self-esteem. Bieng fat is a reflection of poor self-esteem and that you don't care about how you look.

I think you sound hott. The only reason older guys look at you is because they want sex not because they like you. I know I'm an older guy who would want to have sex with you and not call you again, I would if the sex was great though. Just being honest.

it is because you are trying to compare different levels of maturity. guys out of high school will look at you and see all your good points and want to know more. guys in high school will only look at you for what they see and compare you to the next girl.

You look young and since pervs are everywhere thats why you get the attention. Must be how you are dressed.
But guys your age whom are probably not that sick (yet) see you and if you are overweight, I am sorry, its a big turn off.
