~*~Hot Apple Cider Recipe
Ingredients
# 1/2 gallon apple juice or apple cider
# 2 cinnamon sticks
# 2 whole cloves
# 2 allspice berries or whole nutmeg
# 1/2 orange peel, cut into strips
# 1/2 lemon peel, cut into strips
Directions
# Pour apple juice/cider into a large stainless steel pot (crock pots or slow cookers are best but not necessary)
# Place spices and peels into a cheesecloth. Drop cheesecloth into apple juice/cider.
# In a regular pot: heat to just short of a boil. In a crock pot: Heat for 2 hours.
# Remove cheesecloth.
# Once you are done, you can keep the stove-top on warm and have people ladle the apple cider straight from the pot.

Hot Apple Cider
INGREDIENTS:
6 cups apple cider
1/4 cup real maple syrup
2 cinnamon sticks
6 whole cloves
6 whole allspice berries
1 orange peel, cut into strips
1 lemon peel, cut into strips
DIRECTIONS:
Pour the apple cider and maple syrup into a large stainless steel saucepan.
Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cu
HOT APPLE CIDER PUNCH
1 gal. apple cider
1 qt. ginger ale
3/4 c. red cinnamon candies
1 med. orange, sliced
2 (3 inch) sticks cinnamon
1 1/2 tsp. whole cloves
Pour apple cider and ginger ale into a 30 cup percolator. Place candies and remaining ingredients in percolator basket. Perk through complete cycle of percolator. Serve hot. Yield: 1 1/2 gallons.

If you have apples and want to make cider out of them you grind them coarsely and press out the juice in a cider press. A natural fermentation will occur after a couple of weeks of storage at room temperature in glass containers.
If what you want is apple juice you must stop the fermentation by bringing the juice to a boil the day you press the juice.
Any variety of apple works but the flavor will be different and usually people mix several types.
I made some out of Yellow Delicious some years back and it was delicious except it was sort of a yellowish/green color.
As with wine the color comes from the skin.
