Who has heard of Hog Head Cheese because it's serious disgusting. I don't know where it's orginated maybe North Carolina or something but you can get at a local corner store. Also does anyone like the taste of it?

That is where the one respondant is wrong, it is not a North Carolina or American in orgin, it is European and is prepared from Sweden to Austria, and is found to be a tradtional fall food, mainly because that is when after the harvest and killing the winter's meat to be salted and smoked, the remaining parts of the pig were boiled with the bones, skin and spices, when finished the meat was trimmed and set it the stock it was cooked it, the natural gelatin from all the parts, heads, feet, tails, ears and skin with bones made a natural gelatin, this could be kept for months.

In fact if you can find a Czech or Hungarian restaurant this time of year they might specialize it as a lunch item, with buttered bread, pickles, fresh onions soaked in vinegar quite a different dish to enjoy. Here in Canada, most European butcher or delis sell it all year long, and you can but it at the local grocey store in tubes from Schneider, I rarely eat as I am on a diet but won't turn it down if offered.

In West Virginia we call it souse. My grandfather used to eat it and pickled pigs feet. I can't say that I have had the pleasure. You have to remember that up until the twentith century people had to rely on what they grew and raised and later local markets. They didn't have 24hour supermarkets. They wasted nothing because they couldn't afford to.

Head cheese (AmE) or brawn (BrE) is in fact not a cheese, but rather a terrine of meat from the head of a calf or pig (sometimes a sheep or cow) that would not otherwise be considered appealing. It may also include meat from the feet and heart. It is usually eaten cold or at room temperature as a luncheon meat.

Historically the cleaned (all organs removed) head was simmered to produce a gelatin (which would form from the bone marrow) containing any incidental meat which came off the head. The more modern method involves adding gelatin to meat, which is then cooked in a mold.

Hog Head Cheese is a southern delicacy. It is composed of a pig's lips, *****, and assholes. It is generally eaten with saltine crackers and an ice cold Pepsi. It's an aquired taste, not for the squeamish of heart.

I grew up in Texas...... we always had Hog Head Cheese in the house. No worse than eating caviar or sushi. Just another food.

It pales in comparison to hog feet cheese.

I think the stuff is revolting, but I have known people who like it.
