I am going to be making an apple/pecan cheescake.

I always like to use green or granny smith apples to bake with, they seem to keep their texture a little better than others. I'm always disapointed when I bake with red apples, they tend to get a little mushy.

Depends on how strong/full of an apple flavor you want.

I echo the recommendation for gala apples only if you want a very light apple influence.

If you're wanting a stronger apple flavor I'd suggest Braeburn, Pink Lady, or Granny smith apples. Also, if you have access to ANY homegrown apples, these will generally have much stronger flavor than anything bought in the store.

Red delicious would be a good choice if they smell good and are firm...

I don't suggest Jonathans or golden delicious!

For pies and crisps; Northern Spy is a favourite for tart flavour and holding it's shape, Idared and Mutsu/Crispin also hold shape well.

Golden Delicious is excellent for open-faced tarts.
McIntosh has a softer texture and can be mixed with firmer apples.
Use one kind or a combination of apples to get the texture and sweet-tart balance you prefer.

For baked apples; Idared, Mutsu/Crispin and Northern Spy ( hold their shape well).

For smooth applesauce and soups; Empire, McIntosh, Royal Gala ( they break down readily).

For cakes, muffins, chunky sauces, chutneys; Cortland, Golden Delicious, Granny Smith, Idared, Mutsu/Crispin, Northern Spy, Spartan ( soften but hold their shape).

Cortland does not discolor when cut and is good for salads.
Red Delicious is best for eating out of hand or in salads; not good for cooking.

Tart Apples: Granny Smith, Northern Spy.
Sweet / Tart Apples: Cortland, Empire, Idared, McIntosh, Mutsu/Crispin, Spartan.
Sweet Apples: Golden and Red Delicious, Royal Gala, Russet.

If you are buying from the store go with Granny Smith but it is apple season and there are a wide variety of very good apples available. Try macintosh, jonathon, cortland, gala....anything fresh. I used macintosh recently in an apple crisp, oh my was it delicious.
