It does melt.

The swiss and french use it in Fondu(I think)

It is used in some seasonal BK burgers

However, I think that swiss cheese is not well suited for mexican food. The standard for mexican food is Monteray Jack. Or when not avilable, you can use cheddar.

Yes. Melting swiss cheese is the only way to get rid of the texture of plastic it has.

It melts beautifully. Let's make some fast fondue:

In a nonstick saucepan, sautee 1 chopped garlic clove in 1 tablespoon of butter. Mix a tablespoon of cornstarch in 1 1/2 cups of sweet white wine. Add to the saucepan, and when it's thickened, add 1 lb cubed swiss or gruyere (or half of each!) Stir continually over low heat until melted and combined.

Dip bread chunks, apple chunks, tomatoes, celery, mushrooms, crackers, croutons, whatever you like. A great party dish!

If it's real Swiss, it will melt. Just not like that fat-free stuff. I have no idea what that substance is, but it's not cheese!

Yes. It just may take a few minutes longer. I use swiss in casserole dishes and it always melts.
