I love making onion soup!
INFO: it is called "french" when there is a large crouton of sourdough at the bottom.
2 Lrg Onions - white
2-3 cans beef stock - depends on how "oniony" you like it and how "soupy"
2-3 tbs of worcestershire sauce (give that classic "bite")
1 tablespoon butter
optional: shredded parmesean chees to garnish
optional: sourdough "croutons" from day-old bread
Slice onions into ringlets, cut ringlets in half, place in large pot with butter.
Sautee over med-low heat until onions are soft and clear
Add beef stock & worcestershire
Simmer on med-low for 15-20 mins, stirring occasionally
just before serving, sprinkle parmesean cheese to taste and add crouton of you wish.
To make Croutons:
Using day old bread makes the bread stand up in the soup a little better, but you can use fresh as well.
Slice bread into slices about 1/2" thick or into cubes
place in 250 deg oven until lightly browned, turn and brown.
add to soup just before serving

Try Good Eats--it's on the Food Network. I seem to recall Alton Brown making French onion soup once. Julia Child's recipe seems harder. Or maybe Alton just explains it better. His looked goo-ood.
It's basically a ton of onions caramelized in plenty of butter and a really good meat stock. Takes a lot of time, but it isn't really that hard. Don't put in too much salt, though--the soup is often way too salty. Put on a baguette crouton and some cheese--I've seen Swiss and Parmesan most times. Toast the whole thing in an oven-proof dish (put it under the broiler.) Ta-da! OK, so it's not super-easy. But it's worth the effort. Your son will appreciate it!

This soup recipe is soooo easy and it will taste like you've been cooking it all day. Anybody can cook this one. :)
French Onion Soup:
2 large onions,diced large
4 cans beef broth
muenster cheese for garnish
croutons for garnish
Chop onion and saute until still crunchy in butter. Add to bouillion.
Boil and simmer @15 min.
Sprinkle with cheese and croutons before serving

All above are great recipes. I can only add 2 variations. Use half chicken stock and half beef stock, if using canned look for low sodium. Add a little rosemary for that taste you can't put your finger on.
Phone book in the frig. That's a good one.

My brother in law told me how to make it it is very easy. Slice 5 onions, white or yellow, fairly thin. Put a little oil in a pot and saute onions. When done add some beef broth and red wine.. Simmer. Then take some bowls toss in some croutons pour soup over top and place a slice of swiss cheese and let it melt . Oh yeah add salt, pepper and a little garlic to taste. Enjoy

My mom found a recipe from an old, old cookbook. It is by far the best french onion we have tasted...we order from all the restaurants around just to see...it's the best!!!
