People tend to overcook their vegetables, and cook the nutrients right out of them. Raw are the best as far as nutritional value goes, steamed are pretty good, too, if not overdone.

no, raw ones are healthier and has more nutrients because of course when you cook them, you have to wash them first and at that first step, the nutrients wash off. so it's not as healthy anymore(but it's still healthy) and then as you cook them, the nutrients simply flow off them especially when you make them in a soup. water goes in and the nutrients go out. unless the vegetable swells..so the nutrients stay..so yeah..it's kinda hard to understand..but i know that it doesn't have as much nutrients as the raw ones.

As long as you are cooking them in a way that you aren't pouring all the minerals down the drain. (like boiling) The best way I have found is by microwaving them with only a few teaspoons of water. (Good with broccoli or carrots) For any kind of potatoes, bake them, skins on.

I prefer the steamed or less cooked vegetables. It's delicious when I make a thick sauce of onions, garlic and ginger+spices and add the steamed veggies to it.
