Steaming is the best way to cook an artichoke. Cut the top off flat (the tips of the petals) place them in a steamer on this end adn steam until done. Serve with a good dipping sauce. Make sure you don't try to eat that fuzzy thing in the center (heart) of the artichoke! Some people say that's where the artichoke gets it's name!

It works to boil them too. Just fill up a deep pan with water - I toss in a wedged up lemon and a tiny bit of oil too. Let them gently boil until the stem is soft when you poke it with a fork. Depending on the size of the artichoke, usually about an hour.

We usually steam them. I stand them up in a pot, put some water on the bottom, add oil, salt and a couple of cloves of garlic in each one. Cover and cook.

Steam it. Cut off the sharp bits & put it, upside down in a steamer.

We've had good luck just by boiling them, with a few squeezes of lemon for flavor and so they keep their color. Serve with aioli. Don't even cut them apart, just rip off the leaves, dip, and drag the "meat" out through your teeth. YUM.
