those crispy fried pieces you get at long john silvers?

Years ago, they used to refer to them as crispies on the TV commercials. I guess they would know.

If you mean those little bits of leftover fried batter along with the fish, I've always for years called them "crispy crumblies".

I don't know if there's a technical word for them.

They are probably fish scales or those long strands of poop fish leave in the tank?

If you mean the leftover bits of batter, I've heard them referred to as "cracklins." Otherwise, it's "fish" or hushpuppies (fried cornbread).
