Ok, so my kid likes to eat corn by the handful, I think he just swallows them, because the next day I can see a bunch of whole kernels in the stool? I guess they server as good fiber...

That is called PooP corn!!!

If you don't chew something, your saliva and digestive juices can't get to it to break it down. It passed back out whole. This happens to adults who eat corn, too.

To serve as good fiber the food would have to be high in fiber AND mixed in with the rest of the digested foods. Corn isn't even a good "vegetable" because it's mainly simple sugars, not much fiber or other good stuff. And when it's not chewed, it's not mixing in with the other stuff to be able to do the good work fibre does.

Ok, had to explain this one to my husband the first time he changed a similar diaper.
Corn is full starch. Howver the husk is not able to be digested by the human stomach. It is a very dense fiber that is just too hard to break down. It doesn't absorb much either, that's why cornbread has the texture it does.
So, chewed or unchewed you will continue to see the remnants of the kernels.

Humans are unable to digest certain type of plant matter, particularly the more solid or waxed surfaces of many vegetables, leafy plants like lettuce, and more.

Corn is just a condiment for poop.

peanuts come out whole too.
