I heard once that you could put them in water and see which ones float...
I just always open mine in a container separate from where I'm mixing my ingredients... If the egg has gone bad, you'll know right away because of the strong odor... then you can just throw out the bad egg without losing the entire recipe....

On eggs that have a federal grade mark, such as Grade AA, the date cannot be more than 30 days from the date the eggs were packed into the carton. As long as you purchase a carton of eggs before the date expires, you should be able to use all the eggs safely for three to five weeks after the date you purchase them.

I have had eggs for a month past the "due by" date. NO problem!
I also freeze eggs if I end up with too many. I simple whip them up like a scrambled egg pour them into ice cube trays then move them to zipper freezer bags for later use. If I need an egg or two for a cake or meatloaf, etc... I simply grab two eggcubes. EASY EASY !!

Open into a dish first and smell, throw it out if you smell sulfuric gas being released. when you by them new soak them a minute or so in a mixture of 2 tbs. of boric acid in a half gallon of water and let them dry. the should last up to a year or so. we did this and kept it unrefrigerated buried outside under the frost line and when we opened them 8 months later they were fine.(the date on the package has a 10 day cushion according to the FDA)>

Crack open eggs in a separate bowl. If they look okay and no blood, they should be good. Usually eggs are good for one month after the selling date.

this is a good one! you dunk the eggs in enough water to cover them, if they float they are really bad... they can be just leaning up which is ok but throw them out really carefully if they do float, they normally last way longer than the sell by dates.

crack the eggs one by one into a dish, if they arent discolored and smells ok, you should be fine. I generally use them no more than week after the sell by date.

eggs are good up to a month !
to tell what theyre good for !
try-this -
in a bowl with water place the eggs in
if they float-your good for regular-omlette -over easytype
if-they linger-they can be-used for scramble-or soft-boils
if they sink then you better just boil em and make a nice ,egg-salad ,deviled egg,s ,etc.

safe thing to do would be to throw them away and maybe try buying the half dozen instead of the whole dozen...most stores sell them like that now.
