should you freeze the pesto before adding cheese and oil, or is it best to complete receipe and then freeze. It is wonderful to have all year long. I have frozen the completed receipe in small batches but recently saw an article that stated it is better to freeze without the oil and cheese. Any comments???

No problem freezing after pesto is made completely. My wife makes batches in Aug and Sep with fresh basil and puts them in small plastic containers. I have yanked those babies out of the freezer that have been there for two years and you cannot tell when it is defrosted. It tastes almost exactly as fresh. Go ahead and feeze them but date the container.

I freeze it and haven't had any problems. I use freezer containers and once I put the pesto in I put a thin layer of olive oil on the top to keep things from turning brown.

Do you not watch the Rachael Ray show? She freezes the complete pesto with olive oil and everything inside. Freeze it flat in plastic baggies for maximum room in freezer.

I have never heard of not putting the cheese and oil in before freezing. Just let it defrost in the fridge, and not microwave it.

I love my pestos.

We make it up completely then freeze is in small containers.. enough for a meal or 2. That way you don't go in to the whole batch. We do enjoy it all year around this way..YUM!

I've always completed and froze mine, never had a problem. BTW, try this,thin cut Bagettes, pesto, roma tomatoe, buffalo mozzarala, whole basil leaves, lightly broiled or oven heated and start the party

Oils do not freeze.Better to add cheeses and oils later.Better for the taste of the cheeses as wel.

Absolutely can freeze... try both ways.... to see which YOU like best after being frozen. Everyone has their own preference!!!
