You could always go with the famous "Cheese & Crakers" tray. And have pepperoni, keilbasa, or little deli meat squares with it. My famous finger food recipe is my "Chili Dip" with tortilla chips. 2-3 cans of chili (no beans) 1 brick of Philiadelphia Cream Cheese -Warm it up and stir cream cheese into chili until well blended -Melt some shredded cheddar on top (optional) -Serve warm with tortilla chips This is a pretty inexpensive dish. Good luck!

Pinwheels!
Get some tortillas a thing of plain cream cheese, and some fillers. I like diced olives and diced chilies, but you can also use diced ham, sun-dried tomatoes, pine nuts, or anythign else you can think of. You then mix your ingredients into the cream cheese, spread that onto the torilla, roll it tight, and make 1"slices all down the tortilla and serve them on a plate or dish so that you can see the spirals. So tasty! And the best part is thta YOU get to eat all the ends of the tortillas that only got a little cheese on it!
I guess this isnt the cheapest but its pretty cheap.

I too, needed something inexpensive, that would serve 40. This doesn't sound appetizing to me, but someone told me to serve this, and they all loved it. Open an 8 ounce pkg of cream cheese, and place it in the middle of a plate, and pour Worcestershire sauce over it. Then, surround it with crackers. You can also use a can of chili instead of Worcestershire. I made 3, and didn't have left overs. I didn't even get a chance to taste it, it went too quick.

Make a large tray or several smaller trays of veggies with a ranch dressing dipping sauce. Put carrots, celery, red tomatoes, small amounts of cut up cauliflower, olives, cut up green and red peppers or other veggies that are on sale. Good luck and I hope it goes well for you!

Breaded Fried Mushrooms! (yummieeee)
1 pound mushrooms (i prefer crimimis, but white will do)
6 eggs, well beaten
1 tbsp cream (or milk) to thin eggs
1 pound of your favorite bread crumbs
1 pound all purpose flour
Clean off mushroom with soft brush or paper towel. DO NOT WASH. Place each dry ingredient into a seperate bowl. place beaten eggs and cream into another bowl.
Place cleaned mushrooms into egg mixture and then into flour.
Shake off excess flour and place mushrooms back into egg mixture, making sure to completely coat with eggs.
Place mushrooms into bread crumb mixture, making sure to completely coat mushroom.
At this point you may either place them into a 350 degree deep fryer or place them on a sheet tray and freeze them for a short time. if you freeze them be careful when you place them onto the fryer since the water in the shrooms may cause the fryer to overflow. DO NOT OVERFILL YOUR FRYER ....
its fast, its cheap, and they taste sooo good...
