because when you've burnt something all that's left is the carbon(think charcoal) so no matter what you've burnt the only thing your tasting is the carbon

Haha good question, simple answer. The burnt flavour is actually plain old carbon. All burnt things turn black because most food is organic which means its made primarily of carbon, all the other elements are driven off by the heat leaving behind pure carbon. If you want proof, lick a peice of barbeque coal, you'll find it tastes the same.

because when something is being burned the atoms and substances that make up the object or thing are being consumed and destroyed leaving only carbon or ash and the thing or object not only changes physically but also chemically its all about chemistry
