I have been trying to watch calories and fat and thought that this might be better than buying prepared PB from the store. Thanks!

Cashew Butter
Yield: Approximately 1 to 1-1/2 cups

2 tablespoons honey
1/3 cup walnut oil
2 cups roasted cashews
1/2 teaspoon salt

Place the honey in a microwave-safe container and heat in the microwave for 15 seconds. Remove from the microwave and add the oil to the container.

Place the nuts and salt in the bowl of a food processor and pulse for 5 seconds. Then, while the processor is running, very slowly drizzle in the honey and oil. Process until an emulsion is formed and the mixture is smooth; this will take approximately 45 seconds to 1 minute. If the mixture is too thick and doesn't spread easily, add a little more oil.

Homemade Peanut Butter

2 cups roasted shelled peanuts
1 tablespoon peanut oil
1/2 teaspoon salt (omit if salted peanuts are used)

If using a blender, put the oil in first. Add the peanuts and salt next. Blend until desired consistency is reached.
In the food processor, use the metal blade to process ingredients continuously for 2 to 3 minutes.
Stop the machine to scrape down the sides of the bowl. Continue to process until the desired consistency is obtained
For crunchy peanut butter, stir in an additional 1/2 cup chopped roasted peanuts after the processing is completed

You're not going to save a lot of calories and fat by making your peanut butter at home. Now, you'll have more satisfaction by making it yourself, and it may even taste better -- but if all you're worried about is fat & calories, it would be easier to buy it already prepared at the grocery store.

For example, one serving of dry roasted peanuts (28 grams) yields:
160 calories
14 grams fat
230 mg sodium

one serving of creamy peanut butter (32 grams) yields:
190 calories
17 grams fat
140 mg sodium

See? Once you take into account the difference in serving sizes, the numbers are virtually the same! You'll eat a little bit of sugar with each bite of prepared peanut butter, but way less sodium.

Here is what I do. It is easy and virtually no mess.

I buy the natural, no sugar added peanut butter at the store. With this type of peanut butter the oil floats to the top. When I get home I open the jar and drain all the excess oil.

It is a little firmer than regular peanut butter but the flavor is there and the fat content is much less.

Ingredients

Roasted peanuts in shells
Corn or Vegatable oil
Sugar

What you'll need

Measuring cup
Food processor or grinder for chunky peanut butter
Food blender for smooth style peanut butter
Tablespoon
Teaspoon
Jar



1) crack open the shells and remove peanuts (about a cup full)
2) Remove the red skin from the peanuts
3)if you want chunky peanut butter put the peanuts in a food processor or grinder and run the chopped mixture through 3 or more times until you get the consistency you want. For creamy style peanut butter use a blender.
4)add about 1 - 2 tablespoons of cooking oil in small amounts and regrind or blend until you reach your desired consistency.
5) add sugar by the teaspoon until you get your required taste

Just grind the peanuts up. You don't have to add anything else. The processed kind adds salt and sugar. Sometimes you can find pure peanut butter in the store, but it does taste a little different!

you can make it in a blender!!
all you need are roasted peanuts,
salt.
blend to the consistency you like remove to a bowl and let sit at room temp. until the oil is visible on top . drzzle oil into container and save !(you may need it for a stir fry !!) obviously the butter will be dry at this point but a little water,jellies,jams,or even-cream-cheese will soften to a spread ! and really all you did was remove the saturated oil from the peanut ! but kept the taste..-store bought has all the presurvatives and things we dont need in our system thats why i make almost all my meals in a natural homemade style-brand with no chemicals !!
