Most whiskey is traditionally made from barley. This is all you should find in Irish whiskey and Scotch malt whisky.

But many armerican ones, like Bourbon include large amounts of maize (locally called corn). Maize alcohol is also used as a cutting adgent in bleded whisky.

Less common cereals, like rye can also be used, Americans make excellent rye whiskey.

Whiskey is essentially beer without hops that is distilled.

More specifically, any starchy cereal grain can be converted with enzymes into a sweet liquid (called wort if you're making beer, wash if you're making whiskey) that is fermented with yeast.

Then the alcoholic wash (moonshiners did call it "beer") is then distilled to separate the alcohol from the remaining liquid.

It's then stored in barrels where it matures, gets its color and most of its flavor, and bottled after the barrel aging.
