Very simple pasta dish which I absolutely adore -

Spaghetti with Olive oil, Chopped Garlic and Red Chilli Flakes.

For one person add about 2 tablespoons of Olive Oil, 1 clove of chopped garlic and half a teaspoon of chilli flakes into a pan. Put on a low heat for just enough time to make the garlic soften but not too long so that it burns and a little salt and pepper to taste.

Stir in enough Spaghetti (cooked Al Denté) for one person so that it's full coated in the Oil and turn out on a pasta plate of dish.

You can garnish with chopped parsley of grated parmegiano depending on your taste.

Sounds too simple to be true but it's gorgeous, especially with some Garlic Bread and a nice cold glass of Frascati.

I lived in Rome for 6 months last year and I must have ate this on average about 3 days a week, my favourite pasta dish by far.

Try this one, it's delicious.

Baked Capellini with Ham and Mozzarella serves 4 - 6

salt & black pepper
500g capellini*

300g mozzarella cheese, thinly sliced

Method
1. Butter a shallow ovenproof dish and sprinkle with half the breadcrumbs.
2. Beat the eggs with a little salt and pepper
3. Cook the pasta in boiling salted water, drain and stir in three-quarters of the Parmesan cheese and three-quarters of the butter.
4. Pre-heat the oven to 240C/475F/gas 9. Put half the pasta into the ovenproof dish and cover with the ham and mozzarella cheese slices. Pour over the eggs and then add the rest of the pasta. Can't really answer this coz you've not said what you've already had.
You can do loads with pasta, all flavours. why not try chucking all the stuff you like in with it and see what flavours you like, It's amazing how a little of something can change a whole dish, like bacon is very flavoured, or garlic, paprika or fish.
Have you tried Tortellini type which is like a pasta parcel with something like cheese and mushroom in the middle or beef and basil or something. lasagna, try lamb or chicken lasagna instead of beef or a veg variety.
Most pasta sauces aren't expensive but the bill does creep up with the ingredients you add.

Season a boneless, skinless chicken breast with Italian seasoning and a dash of oregano. Cook in 2 tablespoons of vegetable oil (makes the chicken moist inside).

At the same time heat up some pasta sauce (whatever kind you like). Season this with a bit of Italian seasoning, garlic powder, and onion powder.

When the chicken is finished (no longer pink inside), cut up into cubes and add to the sauce. Heat on low to keep it warm.

Boil up any kind of noodles that you prefer. Strain and dish up. Top off with sauce and grated Parmesan cheese.

are you eating the ravioli type stuffed pasta as well as the regular spaghetti type of stuff? I do the ravioli stuff in the oven - cook it up following the directions on the pack, put it in an oven proof dish, add a tomato based sauce, cover the pasta and the sauce with a layer of white sauce, sprinkle cheese on to and bung it in the oven till the cheese is bubbling - lovely!

I have a great idea, and not to expensive. It's called Shrimp and Clam Marinara

3 cans Italian seasoned diced tomatoes (off-brand will do)
3 tbs of sugar
1/2 tsp of red pepper flakes
2 small cans of baby clams
1/2 lb of shrimp (fresh is better, but frozen will do)
1 white onion (chopped)
Angel hair pasta

In deep skillet, saute' onion. Add tomatoes, sugar, and pepper. Let simmer for about 5 minutes. Add shrimp and clams (with juice). Cook on med/low for another 10-15 minutes. Serve over pasta. Great with fresh Parmesan cheese. Delicious!!!!

We have this meal at least once a week at my house.

I have seen a great recipe with savoy cabbage (fried until crispy) and crispy streaky bacon (or pancetta I suppose). Think it also had onions and mushrooms in it. Can't remember the exact recipe but it is quite yummy. Toss the ingredients in with some spaghetti and maybe a little olive oil.

Alternatively Jamie Oliver does a lovely spicy sausage meat pasta in one of his books. You could try that out.

I like to make a smoked salmon and cheese sauce for pasta, with copped chives & garlic, which is very nice and you might like to try ?.

You'll Need -
Pack of smoked salmon - cut into strips.
2oz of your favourite cheese - Grated.
Large pot of double cream.
Chives - Finely Chopped.
2 Garlic cloves - Finely Chopped.
1 Veggie stock cube.
Rock or Sea Salt - to taste
Black Pepper - a good twist.

Just add all of the ingredients into a pan and slowly bring to a simmer, cook for about ten minutes and its done.
