To indicate that it is indeed a small onion, it is called a pearl, but there are also other members of the onion family with the names of shallots, rampion, scallions or simply baby onions. In Italian they are called 'cipolle' and baby onions are usually cooked as agrodolce...a sweet and sour sauce...Piedmontese recipes often use larger onions and stuff them with meat. A very nice dish with baby onions is 'Focaccia con cipolle' and I usually fold it and use prosciutto to make a great sandwich.

Small Onion is a perennial with leaves that are 3-5 cm long overtopping the infloresence, arising from solitary or
clustered egg-shaped bulbs with brown or gray fine-textured coats. The 2 leaves are sickle-shaped, flat, 2-5 mm
wide and arise from near the base of the stem. The pink flowers are borne on stalks that are 7-10 mm long, in a
hemispherical inflorescence that is subtended by 2 papery, narrowly elliptic bracts at the top of the distinctly
flattened stem. Each flower has 6 narrowly lance-shaped, petal-like tepals, that are 7-10 mm long, and 6 stamen,
that are shorter than the tepals. The ovary has 3 rounded crests on top. Flowering in late May-June.
The flattened stem and fine-textured bulb coats separate this species from the similar A. SIMILLIMUM, A.
TEXTILE and A. BRANDEGEI.
