If the koran says that muslims should dress modesty, and therefore some women choose to cover their hair and/or wear a veil - why don't muslim men do the same?

Neither Muslim men nor women are commanded in the Quran or in the Hadith to cover their face with a veil. This is a custom that varies from country to country. Some have put the practice, where it occurs, in the realm of pre-islamic customs that are held over. For instance the Burqa is a left over practice from when the Byzantine empire ruled those areas.
You are correct that the Quran enjoins all muslim men and women to dress modestly and many muslim men do wear head coverings, Kufis, turbans and other loose fitting clothing such as jalabas, thobes, salwar kameez and etc. Some men do and some men don't just as some women do and some women do not.
The Quran also teaches us that the true modesty lies within the heart and that is the best cover.

I am Muslim and women do not have to cover their face. That is not in Quran what so ever. Women that do it choose to bc they do not want any men to look at them what so ever. And it is also in a lot of cultures. Women are supposed to dress modest is all and I know many Christain & Jewish ladies who do this as well. WHy would no woman not want to? As far as men go yes they should be modest as well but I do not see any men wearing short skirts & so on do you?lol. Women wear hijab which is the head scarf bc of modesty as well. I wear a hijab and I like it but it was my choice.

The Quran says that women should dress modestly and expose only what is needed to perform daily functions. This is interpreted to veiling the face in some countries. It should be noted that most Muslim countries do not veil.

It's a choice not mandatory for women to cover their faces and hands and everything. Islam says dress modestly for both men and women..some women take it to extreme and show nothing but their eyes...some women wear nothing but a bikini (still Muslims). This is a misconception.

for the same reason christian men dont
it s a requirement of the women in these religions to be respectful and modest and cover their heads
the men are asked to wear the the hair on their head and their facial hair in certain ways to be modest and respectful
dont people understand that these things are not forced but asked of
and that it isnt only mulsims who are asked these things but christians and other religions also

The men don't have to hide their beards the way the women do. Veils are cheaper than electrolysis.

Islam says Cover all your body except you face and your hands!!..WHY?? because the are tools of dealing with other humans!!!i cant know you if you have a veil on your face!!!
the veils on the head is KNOWN IN CHRISTIANITY as it is known in ISLAM!!!....GO ask your NUNS!! why do they put a scarf on their head !!!??
