Vegetable Manchurian - Oriental Fusion Cuisine

Its one of the most popular dishes available in the roadside eateries around India. A perfect Indian adaptation from the Orient! Its one of my fav. & I hope it becomes your's too.

2 cups cabbage, Finely chopped
1 cup carrots, grated
2 eggs, slightly beaten
3/4 cup white flour (maida)
1/2 teaspoon garlic paste
1/2 teaspoon ginger paste
1/4 teaspoon aji-no-moto (optional)
2 tablespoons oil
1 teaspoon garlic, Finely chopped
1/2 cup onions, Finely chopped
1 large red capsicum, chopped fine
The Gravy
3 tablespoons cornflour
1/2 cup water (to blend conrnflour)
2 tablespoons vinegar
2 teaspoons salt
2 teaspoons soya sauce
1/2 cup tomato puree
2 tablespoons chopped celery
1/4 teaspoon aji-no-moto (optional)
2 cups water
oil (for deep frying)



1. Mix together the vegetables (Cabbage & Carrots), egg, flour, garlic and ginger paste, ajino moto and enough water so as to have a thickish batter. Leave standing for 5-10 minutes.
2. Heat the oil and keeping the heat high, drop heaped teaspoonfuls of batter and fry to a golden brown. Drain on absorbent paper till required.
3. For the gravy: Heat 2 tbsp oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. Add the capsicum and turn around a few times. Add the sauce mixture, and simmer till the sauce thickens and becomes translucent.
4. Add the fried balls, turn around a few times and serve.

Veg Manchurian

Ingredients
For vegetable balls
1 cup (maida+cornflour)
3-4 cloves of garlic chopped
1 inch ginger chopped
100 gms cabbage grated
2 carrots grated
1 capsicum chopped
pinch of soda bicarb
1\2 tsp salt
1\2 tsp ajino moto
1 tsp soyasauce


Method


Make a tough dough out of the above ingredients, make balls and fry in oil.

For sauce
Ingredients
6-7 cloves garlic chopped
2 inch ginger grated
3-4 green chillies chopped
1 tbsp soya sauce 1tsp ajino moto
1 tsp salt
1 tbsp cornflour
2 tbsp oil

Method

Heat oil. Fry ginger, garlic, green chilies for 1 min.
Add 1&1\2 cups of water, ajinomoto, soya sauce & salt.
Cook the water for 3 min.
Add balls & cornflour paste.
Garnish with spring onion leaves
Serve immediately ......................yo

For Manchurian balls:
Carrot (grated) - 3 nos
Cauliflower (grated) – 1 no
Raw Papaya (grated) –1 no
Small Cabbage (grated) – 1 no
Green chillies(finely chopped) – 2 no
Allpurpose flour(Maida) - 1 tbsp
Ajinomoto - ¼ tsp
Black pepper powder – ½ tsp
Salt - ½ tsp
Corn flour - 2 tsp
Oil for deep frying

For Manchurian sauce:
Oil - 2 tbsp
Ginger paste -1 tsp
Garlic paste - 1 tsp
Worcestershire sauce - 1 tbsp
Tomato sauce - 1 tbsp
Soya sauce - 2 tbsp
Vinegar - 2-3 tsp
Green chillies
(finely chopped) - 3-4 nos
Salt - 1 tsp
Onion (finely chopped) – 1 no
Black pepper - ¼ tsp
Corn flour - 1½ tbsp

Preparation Method
For making balls:
1)Put 1 tsp. salt in grated cabbage and leave it for 15 minutes. After that squeeze it to get the water off.

2)Mix all the ingredients for manchurian balls. If the mixture is too soft, add more maida.

3)Make balls of oval shape and roll them in dry maida.

4)Heat oil in a pan or a kadai.

5)Fry the balls till they become golden brown in colour.

For making Manchurian sauce:
1)Heat 2 tbsp. of oil in a pan or a kadai. Sauté onions and green chillies.

2)Add ginger and garlic paste and fry it for one minute.

3)Add the sauces, vinegar, salt and black pepper and cook for 1 minute.

4)Add 1½ cups of water and boil it and simmer for 2 minutes.

5)Mix 1/2 cup of water in corn flour and add while continuously stirring it. Cook till it becomes slightly thick. Remove from flame and keep aside.

6)While serving, boil it again and put the balls in it.

7)Cook for one minute.

:-Serve hot.

steps:
1.take one cabbage, one carrot, 10 bean, onion, garlic, soya sauce, chillli sauce, tomato sauce, araroot powder.
2. cut the cabbage as carrots r cut for making gajar halwa ie. very fine.
3. cut other vegetables in the same way.
4. MAKE A DOUGH by mixing all the ingredients with araroot powder only without using water. the water of the cabbage will help.
5. simultaneously add all the sauces as per ur taste.
6. make small doughs from the main dough and fry in oil as the poori are made.
7. now take the onion, chillies, garlic pieces, fry them in 2 to3 tbs of oil
8.add to it the fried doughs.add tomato, chilli sauce as per the requirement.
9 give a final heat up till the sauce r little bit gone.
10. serve with roti, parantha anything u like.

for the vegetable ball:chopp or grate carrot,cabage,chlli,cauliflower season with salt and pepper add little refined flour,agg make tight balls fried in a oil .keep aide
for the manchurain sauce-chopp onion,celery,green chilly,ginger,garlic,corinder leaves,
saute onion,add ginger and garlic saute till the onion slightly brown add stock or water bring to bol,add soy sayce check the seasoning,thicken with corn starch,add fried veg ball,add corinder leaves.
