All purpose flour can be substituted for Cake Flour but your Cake, Cookies, or muffuns will have a denser texture. Cake flour is used to produce a tender texture. Cake flour is differentiated from All Purpose flour by the level of refinement and the amount of gluten (protein). Cake flour has less gluten and is sifted to a finer level. Cake flour is commonly available in Supermarkets next to cake mixes.
Substitutes:
To make 2 Cups of Cake Flour combine 1 3/4 cups all-purpose flour with 1/4 cup cornstarch and sift together. yield 2 Cups of Cake Flour.
or
Use 2/3 cups of All Purpose flour for each cup of Cake Flour.
