Because "duck" is a verb and therefore something you do, i.e. lower your head against whatever missile is coming your way. It is an action and quite separate from you and the person you are.

If someone says "chicken!" to you, however, this is a noun and directed at you and your nature or behaviour. You are not being as brave as you should be. It is therefore an insult about you.

My guess is you've never been in a war zone.
If someone yells 'chicken' then you are probably never likely to hear 'duck'.

Because "duck" infers you're about to be hit catastrophically if you don't...

and "chicken" connotes a sense of cowardice.

And if they yell " Turkey ! " it implies stupidity. If they yell " Buzzard ! " it means you are ugly and smelly. If they yell " Goose ! " pucker up !
