Chinese Paella, a simplified version of the "kiampong,"

Chinese Paella

1 whole chicken sliced into serving portions

Marinade:

2 tbsp soy sauce
1 tbsp pounded garlic
1/4 tsp freshly ground black pepper
2 tbsp white sugar
1 tsp grated ginger
oil for frying
1/4 c corn oil
1 tbsp well-pounded garlic
1 1/4 c sliced red onions
3 pcs Chinese sausage, sliced diagonally
6 pcs dried shiitake mushrooms, soaked until soft, washed and cut into thin strips
3 c raw rice, washed (dinorado variety)
1/4 c plus 2 tbsp soy sauce
1 tbsp plus 1 tsp sesame oil
4-4 1/2 c water or chicken stock

Topping:

Spring onions, chopped finely
Cooked scrambled eggs, sliced into thin strips
Fried peanuts with the skin on

Marinade the chicken for at least 30 minutes. Fry until golden but not necessarily done. Set aside.

In a big wok, heat 1/4 c corn oil. Add garlic and onions, saut‚ until onions are wilted. Then add sliced Chinese sausage and mushrooms.

Mix well. Saute for a few minutes until fat oozes from the chorizo. Add the fried chicken. Pour in rice and mix well. Pour in soy sauce, sesame oil and pepper. Then, pour in one cup of chicken stock. Keep on stirring until the rice has absorbed the liquid. Pour in three cups more of the stock and allow to boil. Transfer to a rice cooker and cook until done. Add more water if necessary.

Transfer the rice to a serving platter. Garnish with chopped spring onions, scrambled eggs and fried peanuts.

Chinese Fried Rice

FRIED RICE

3 c. rice
1 c. half-cooked diced carrots
1 c. green sweet peppers
1 c. red sweet peppers
1 c. diced onions
2 c. Brussel sprouts
3 tbsp. Mazola cooking oil
1/2 c. scallions
1 pkg. Chinese fried rice seasoning mix (S & B Brand)

Cook rice and refrigerate (cold rice is best). Cut Brussels sprouts in half, wash and set aside.

In deep iron skillet, saute onions in hot oil. Add rice and stir until hot. Add Chinese fried rice seasoning mix and continue to stir until thoroughly mixed and particles are dissolved. Then add carrots and Brussels sprouts and stir another minute or two. Mix in peppers and turn off stove. Add scallions when ready to serve.
