I just started a new job as a nanny for a family. One of my job requirements is to plan, shop, and cook for 3 dinner meals a week. The family likes to eat healthy and they like variety (not the same old thing over and over).

Meals I can prepare a few hours in advance and then put in the oven later are the best for me, since I have 3 children to care for. (I can prepare during nap time.)

Lasagne, Beef Stew and Dumplings, Chicken dishes in a sauce, there are such a variety of chicken dishes you could make in advance.

I like tortilla, the spanish version with potatoes.. make it with cooked spinach, well drained..
Put in the pan:
Some olive oil and some butter
Half cooked potatoeslices (you can buy them that way), then a layer of veggies (of which spinach is my fav but be creative), then another layer of the potatoeslices. Put raw eggmixture over it (probably six or so, quantity depends on how big the pan/appetite is) and simmer on low heat for 20 minutes or longer.

You can serve it hot or cold (so also nice for lunch next day!!), Serve with salad.

I don't have any recipes but my advice to you would be to, have any meal that you normally eat that has meat in it, meatless. Like Spaghetti or Tacos, you can replace the meat with Meatless Crumbles. For a Healthy Sandwich, replace canned tuna with chickpeas and use other things you would normally put in a tuna salad like chopped pickles, celery etc.. Serve with Pita Bread or Carrot and Celery Sticks. And Vegetarian Chili, which lasts for days! Hope I helped!

cook with olive oil like chicken Brest. cook fish you could steam it or cook it with olive oil, vegs are good steamed are the best, white rice is good, for lunch soups are good cheese sandwich (grill) or Turkey sandwich with fresh tomato's or salads with a splash of lemon. for the morning oat meal is good, eggs and toast. that's awsome. well you could always go to a book store and find a cook book too.
