If it's stale as in dried out and doesn't look or smell mouldy, put it in an air-tight container together with an apple cut in half. Leave it overnight or for up to a day. The moisture from the apple will freshen it up.
If it's mouldy in any way, throw it away.

there is no way to freshen a stale sponge cake because it's already dry. all you have to do is remodel it . what i do. i crumb'ng it put some chocolate ganache (slowly) to stick them together and make a size of a golf ball or scoop it .roll it to chocolate flakes. now you have a chocolate crumble.

Personally I'd take the opportunity to make a raspberry trifle with it...... make sure you douse the sponge in plenty of alcohol....makes it all the better for the eating!

You might try to cover it and put it in the micro wave for just a few minutes. It might bring out the moisture in it and give it a fresher consistency. If it is too old, then just forget it.
