My favourite cheese is 'Halloumi' which is a Greek cheese and tastes absolutely divine when BBQ or even put under the grill!
Where I live in Spain, I am unable to get this cheese so have to wait until I go to Gibraltar on a shopping trip and then pick up 4 packs which lasts me quite a while. I really miss this cheese when I haven't got any and everyone I introduce to it, feels exactly the same as I do when they have tasted it!!

Well. I Love using Parmesan Cheese, Because it has full flavour, And is very unique, There's No Cheese like It, And, Its Not Expensive Either, Best at 4 months Maturity

It depends on what you are cooking. If you are cooking tagliatelli in a cream sauce with ham, then Dolchellata (cant spell, drinking wine).. if it is smoked haddock, chedder, what a silly question. There are millions of cheeses, and all for different foods. I like double gloucester, 'cause it is creamy, mixed with parmesan for a cauli cheese, with mustard and butter, milk and pepper, and parsely sauce. I hate cooking.

Halloumi is a great cheese to cook with. It is pretty flexible so can be used for a variety of dishes as a good alternative to chicken type meats.

One of my favouirite uses of it is in a Caesar salad. Mmmm!

It works well used in a traditional English breakfast too, and of course being Mediterranean in origin, goes well with all Mediterranean food.

Well on balance would have to be a mature Stilton. Try in vegetable soups, especially broccoli or mushroom, in quiche, best of all, crumbled on a juicy medium rare ribeye steak and grilled for a couple of seconds with mushrooms, chips and a big grilled tomato. Urrrrrmmmm, and I’ve just decided what I’m having for dinner.

Depends on what I am cooking, but a nice strong mature chedder goes really nicely in macaroni cheese and browns nicely under the griller. Because it browns nicely is is good for grilled sandwiches too.

i love all cheeses specially pecorino, manchego, a good mature cheddar, cambazole, halloumi and goats cheese but i think that good old cream cheese is one of the most versatile to use in cooking. add it to tomato sauce... or straight on spaghetti with salt, pepper, chillli and herbs, great in toasted sandwihec with marmite or bacon etc...... an essential!!

Cheddar. Can't get it where I live, so I use a mixture of Gorgonzola and Parmesan. If I want to impress I can drive for 1hr. into Germany and buy Cheddar. Don't want to impress that much normally. Mozzarella's O.K. for pizza, but it doesn't have the bite of Cheddar.
