When I first saw the words roasted potato I thought beef would be your best choice. After seeing that you use sun dried tomato spicing I changed my mind. You need to stick with poultry. Chicken would be the ideal choice. I suggest you pick up some chicken breasts and marinade in some soy sauce, garlic and oil..keep it simple, less is more. Let sit in fridge overnight or on counter for 30 minutes. Rinse and pan fry until both sides are golden brown. Cover and toss it in the oven with a touch of white wine of your choice in the bottom of the pan. Serve a light garden salad and you got one tasty dinner.

Get several chickens and have your butcher half or quarter them. Combine olive oil,minced fresh rosemary with salt and finely minced garlic. Rinse and pat dry the chicken and brush with the oil mixture. Let sit (covered)in the fridge a few hours or overnight. for best flavor. Place chicken in a roasting pan , brush again with the oil mixture and roast at 400 for about 40 minutes, basting once or twice with the reserved oil mixture. Chicken will be crispy and juicy.

roasted chicken. You can even roast the chicked directly over the potatoes so some chicken juice drips onto the potatoes. Yum.

Chicken, or meatloaf would be my choice. Funny, I just downloaded a recipe for roasted potatoes from allrecipes.com. It sounded good!

Meatloaf would definately go with it and you can try different spices, ingredients to try and spice it up. BBQ chicken would go well with it. Pork chops and fish would go well with it. You can also BBQ a couple of London Broils (marinade with slices of garlic cloves shoved in it for that great garlic flavor), a Prime Rib, or even Tri-Tip.
